- 1 1/2 lb lean hamburger meat
- 1/2 cup chopped onion
- 2-3 cloves of garlic-minced
- 1-6 oz can tomato paste
- 1- 1 lb 12 oz can pear tomatoes
- 1-8 oz can tomato sauce
- 2-12 oz cans of V-8 tomato juice
- 2 pkgs dry spaghetti sauce mix
- 1-12 oz carton ricotta cheese or cottage cheese
- 1-16 oz pkg shredded mozzarella cheese
- 1 egg-beaten
- 1/2 cup shredded parmesan cheese
- 1-10 oz pkg frozen chopped spinach-thawed & squeezed dry
- 1-1 lb pkg lasagna noodles
- fresh parsley for garnish
- Optional: fresh sliced mushroooms

- 1 1/2 cups low-fat buttermilk
- 1/4 cup bottled or fresh Key lime juice (from about 8 small Key limes)
- 1/4 cup sugar

- 2- 9 oz pkgs of frozen spinach, (defrosted and drained of all liquid)
- 5 eggs
- 1 medium onion, minced
- 10 tbsp margarine, melted (do not use butter)
- 1 cup of shredded parmesan cheese
- 2 cloves garlic, minced
- 1/2 tsp dry thyme leaves
- 1/2 tsp cayanne pepper
- 1 3/4 cups of Italian bread crumbs
