- 1/2 lb (2 sticks) margarine or butter, softened
- 1 cup firmly packed brown sugar
- 1/2 cup white sugar
- 2 eggs
- 1 tsp vanilla
- 1 3/4 cups all purpose flour

- 1 tsp cinnamon
- 1/2 tsp salt-optional
- 3 cups Quaker Oats (quick or old fashioned, uncooked)

Chewy Molasses-Spice Cookies

Preheat oven to 350° In medium bowl whisk flour, baking soda, cinnamon and nutmeg

- 1 1/2 tsp baking soda
- 1 tsp cinnamon

- 5 cups water
- 1 tsp salt or more to taste
- 1 1/2 cups quinoa, thoroughly rinsed and drained
- 2 cups fresh corn, cooked, or defrosted frozen corn
- 1 cup tightly packed fresh basil leaves, finely chopped
- 1/2 cup diced roasted red peppers
- 1/2 cup finely diced red onions
- 2 tblsp plain or roasted garlic olive oil
- 3 to 5 tblsp freshly squeezed lemon juice

- 1/4 cup lemon juice
