Lemon Tart with Chocolate Cookie Crust and Marmalade Cream

- 1 1/2 sticks unsalted butter, divided: 1/2 stick melted and cooled; 1 stick diced, cold ,, cold
- 1 pinch plus 1/4 tsp kosher salt
- 2 lemons, rinsed and dried
- 1 1/2 cups sugar
- 4 large eggs
- 1/2 cup heavy cream
- 3 Tbsp orange marmalade
- Confectioners’ sugar, for dusting
Chocolate Truffle Torte with Raspberry Coulis

Torte 1. Preheat oven to Convect bake at 350 degrees 2
- Cake
- 1/2 cup butter
- 1/2 cup corn syrup
- 1 cup semisweet chocolate chips
- 1/2 cup granulated sugar
- 3 large eggs
- 1 tsp pure vanilla extract
- 1 cup flour
- Pinch of salt
- Glaze
- 4 oz unsweetened chocolate
- 4 oz sweet chocolate (like German's)
- 8 Tbs butter, softened
- 1/4 cup light corn syrup
- Raspberry Coulis
- 12 oz frozen raspberries, thawed
- 3 Tbs sugar
- 1 Tbs fresh lemon juice

Mix all ingredients except champagne
- 1 (6 oz) frozen orange juice
- 1 liter bottle ginger ale
- 1 (10 oz) box frozen strawberries
- 1/2 liter vodka
- 2 bottles champagne

- 2 to 3 teaspoons milk

1. For the cake layers: Adjust oven rack to middle position and heat oven to 350 degrees
- Cake:
- 1/2 cup buttermilk, room temperature
- 4 large eggs, room temperature
- 2 teaspoons vanilla extract
- 2 1/4 cups all-purpose flour

- 1 cup sharp cheddar cheese finely shredded (or a mix of your favorite cheeses)
