Cheese Straws, Jalapeño

You've got a cheese straw recipe you can make with your eyes closed
- 1 (8-oz.) block extra-sharp Cheddar cheese, grated
- 1/4 cup grated Parmesan cheese
- 1/2 cup butter, softened
- 3 tablespoons diced pimiento, drained
- 1 jalapeño pepper, seeded and minced
- 2 teaspoons half-and-half
- 1 teaspoon kosher salt
- 1/8 to 1/4 tsp. ground red pepper (optional)
- 1 1/2 cups all-purpose flour
