Cornbread Tamale Pie

- 1 tablespoon olive oil
- 1 pound lean ground beef
- 1 cup chopped yellow onion
- 1 tablespoon minced fresh garlic
- 1 jalapeño, seeded and minced
- 1 (14.5-ounce) can diced tomatoes
- 1 ⁄4 cup ketchup
- 1 tablespoon apple cider vinegar
- 2 teaspoons Dijon mustard
- 2 teaspoons kosher salt
- 1 1⁄4 teaspoons chili powder
- 1 teaspoon dried oregano
- 1 ⁄4 teaspoon ground cumin
- 1 ⁄4 teaspoon crushed red pepper
- 1 1⁄2 cups shredded sharp Cheddar cheese, divided
- 1 (8-ounce) package corn muffin mix, such as Jiffy
- 1 ⁄2 cup whole buttermilk
- 1 large egg, lightly beaten
Grandma Brisco Pound Cake

Grease and flour 10-inch tube pan
- 2 sticks ( 8-ounces) butter room temperature
- 1/3 cup Crisco shortening
- 3 cups flour, all-purpose
- 3 cups sugar
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1 cup sweet milk
- 1 teaspoon vanilla
- 5 large eggs
Zucchini Fritters

Grate zucchini into a colander in the sink; toss with salt and let sit 10 minutes
- 2 small zucchini
- 2 teaspoons salt
- 4 scallions, minced
- 1/4 cup parsley, chopped
- 1/4 cup dill, chopped
- 1 egg, beaten
- 3/4 cup Parmesan
- 1/4 cup flour
- olive oil for frying
Dulce de Leche Cookie Bars

- 2 cups plus 1 tablespoon all-purpose flour
- 1 1/2 sticks (12 tablespoons) cold unsalted butter, diced
- 1/3 cup confectioners' sugar

- 1 cup dulce de leche
- 1/4 cup heavy cream

I adapted this recipe from one that I found on Taste of Home based on ingredients that I had in my kitchen
- 1 lb. breakfast sausage, cooked and drained
- 1 c. (4 oz.) shredded cheese (Swiss or 4 Cheese Mexican)
- 1 can (4 oz.) mushrooms, drained
- 1/4 c. finely chopped green pepper
- 1/4 c. finely chopped red pepper
- 1/4 c. finely chopped zuchini
- 1 Tbsp. dried minced onion
- 1 frozen deep-dish pastry shell (9 in.) [Optional]
- 6 eggs
- 3/4 c. half-and-half cream
- 1/2 tsp. ground mustard
- 1/4 tsp. salt
- 1/8 tsp. pepper
Chipotle Cheese Puffs

Preheat oven to 400°F. Coat large baking sheet with nonstick cooking spray
- 1 cup shredded sharp cheddar cheese
- 1/2 cup shredded Parmesan cheese
- 3/4 teaspoon chipotle chili powder
- 1 sheet frozen puff pastry, thawed (from a 17.5-ounce package)
- 1 egg, lightly beaten with 1 tablespoon water
