Chocolate Mousse

Take out a one-cup glass measuring cup
- HANNAH'S FAVORITE CHOCOLATE MOUSSE
- 3 one-ounce squares unsweetened chocolate
- 2 Tablespoons cold salted butter (1/4 stick, Vs cup,
- 1 ounce)
- 4 egg whites (save three of the yolks in a bowl for
- later) 1/4 teaspoon cream of tartar
- 3 Tablespoons water
- Va cup white (granulated) sugar
- 3 egg yolks (use the leftover yolk to add to scrambled eggs in the morning)
- 1 /t cup white (granulated) sugar
- 1 Tablespoon flavored liqueur or prepared strong coffee ***
- ***—You can use 2 teaspoons vanilla extract if you don't want to use liqueur or coffee.
Crispy Baked Potato Fans

1. For the bread crumb topping: Adjust oven rack to middle position and heat oven to 200 degrees

- 1 slice hearty white sandwich bread, torn into pieces

1) Mix, then knead the dough ingredients to make a smooth, elastic dough, about 5 to 10 minutes

- 3/4 cup lukewarm water (about 110°F)
- 2 tablespoons olive oil
- 1 tablespoon Pizza Dough Flavor, optional
- 1 teaspoon instant yeast
- 1/2 teaspoon salt
- 1 3/4 cups King Arthur Unbleached All-Purpose Flour
- 1/3 cup Hi-maize Fiber

- 1 teaspoon pizza seasoning or the dried herbs of your choice

Chicken Strawberry Salad

In a small bowl, combine the dressing ingredients
- DRESSING:
- 1/2 cup honey
- 1/2 cup red wine vinegar
- 4 teaspoons soy sauce
- 1 garlic clove, minced
- 1/2 teaspoon ground ginger
- 1/4 teaspoon salt
- Dash pepper
- SALAD:
- 1 pound boneless skinless chicken breasts, cut into strips
- 1 tablespoon vegetable oil
- 1 teaspoon butter
- 8 cups torn mixed salad greens
- 1 pint fresh strawberries, sliced
- 1/4 cup chopped walnuts
- Additional whole strawberries, optional

1. In a large saucepan of boiling, salted water, cook broccoli for 6 to 8 minutes or until tender

- 2 cups chicken broth
- 1/2 cup well-chilled heavy cream

Peanut Butter Fudge (All-time favorite)

Lightly butter or spray with Pam a 7-inch x 11-inch pan (9-inch by 9-inch pan will do)
- 1 can (14-ounces) condensed milk, sweetened
- 2 cups sugar
- 1/2 stick (2-ounces) butter
- 1 teaspoon vanilla
- 1 jar (12-ounces) peanut butter creamy
- 1 cup marshmallows, miniature (a little more if you like)
Peanut Butter Bark, REESE'S

- 2 packages (4 oz. each) HERSHEY'S Semi-Sweet Chocolate Baking Bar, broken into pieces

- 1/2 cup light brown sugar, lightly packed

- 1 large head Savoy or green cabbage, including outer leaves
- 2 1/2 pounds ground chuck
- 3 extra-large eggs, lightly beaten
- 1/2 cup finely chopped yellow onions

- 1/2 cup uncooked white rice

- 1/4 lb. (4 oz.) VELVEETA 2% Milk Pasteurized Prepared Cheese Product, cut into 1/2-inch cubes
- 1 can (8 oz.) refrigerated reduced-fat crescent dinner rolls
