- 1 1/2 teaspoons lemon peel (zest) grated
- 1/3 cup plus 1 tablespoon fresh lemon juice

- 8 tablespoons sugar
- 1 tablespoon cornstarch
- 1/2 cup cold water
- 4 large egg whites room temperature
- 3/4 teaspoon vanilla extract
