Nut Roll Coffee Cakes

"The bread is tender with a golden brown crust and a nutty filling that’s flavorful but not too sweet
- FILLING:
- 1 package (1/4 ounce) active dry yeast
- 1/4 cup warm water (110° to 115°)
- 1 cup butter, melted and cooled
- 1/2 cup warm milk (110° to 115°)
- 3 egg yolks
- 2 tablespoons sugar
- 1/2 teaspoon salt
- 3 cups all-purpose flour
- 3 egg whites
- 1 teaspoon vanilla extract
- 3/4 cup sugar
- 2-1/4 cups ground walnuts
- ICING:
- 3/4 cup confectioners' sugar
- 1 teaspoon butter, softened
- 1 teaspoon vanilla extract
- 3 to 4 teaspoons milk
Potatoes- Oven-Crispy French Fries With Paprika-Parmesan Salt

Emeril Lagasse' recipe for crispy fries
- 2 large baking potatoes (about 1 1/2 pounds), scrubbed well
- 1/4 cup extra-virgin olive oil
- 1 tablespoon Emeril's Original Essence seasoning or Creole seasoning
- Kosher salt
- 1/4 cup finely grated Parmigiano-Reggiano cheese
- 1 tablespoon sweet paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
Divinity, No-fail Jello

Feel free to experiment with lots of different flavors
- 3 cups granulated sugar
- 3/4 cup light corn syrup
- 3/4 cup water
- 1/8 tsp salt
- 2 egg whites, room temperature
- 3 tbsp Jell-O (powder)
- 1 tsp vanilla extract or other flavor (I use clear vanilla extract)
- 1 cup chopped nuts, optional (I almost always use pecans)

- Preheat the oven to 350 degrees
- 1 1/4 cup whole wheat flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup dark brown sugar
- 1/2 cup granulated sugar
- 1/2 cup butter, softened to room temperature
- 1 egg
- 1 1/2 tsp vanilla
- 1 T milk (I used skim)
- 1 cup rolled oats
- 1 cup semisweet chocolate chips
Potatoes with Bacon and Onion

Bacon and chicken stock make a rich glaze for peeled fingerling potatoes in a sumptuous side dish
- 2 1/2 pounds medium potatoes, such as fingerling or Yukon Gold, peeled
- 4 cups chicken stock, preferably homemade
- 1 garlic clove
- 1 dried bay leaf
- 6 stems thyme
- 1 plum tomato, cut into large pieces
- Coarse salt and freshly ground pepper
- 6 ounces sliced bacon, cut into 1/2-inch pieces
- 1/2 medium onion, halved crosswise and thinly sliced

Chicken Tetrazzini Hotdish

- 2 cups cooked, diced chicken
- 8 ounces spaghetti, cooked and drained
- 1/4 cup diced, canned pimento (1 small jar)
- 1/4 green bell pepper, diced
- 1 small onion, diced
- 1/4 cup dry sherry (optional)
- 1 can condensed cream of mushroom soup
- 1/2 cup chicken broth (1 bouillon cube in half-cup water)
- 1/2 teaspoon salt (garlic salt is best)
- 1/8 teaspoon black pepper
- 2-3 cups grated cheddar cheese
- 1 clove garlic thinly minced (optional)
- 1 small can sliced black olives, drained(optional)
- 1 small can Ortega diced green chilies,drained (optional)

- 1/2 cup Fat-free reduced-sodium chicken broth
- 3 cups Frozen mixed vegetables (peas, carrots, corn, green beans), thawed, drained
- 1 Ready-to-use refrigerated pie crust (1/2 of 15-oz. pkg.)
