- It's important to use the size egg a recipe specifies, particularly when baking. However, the American Egg Board does have some guidelines for substituting sizes.
- 1 large egg =1 extra-large egg
- 2 large eggs = 2 extra-large eggs

- 4 large eggs = 4 extra-large eggs
