Maple, ginger & Five Spice Beans

Preheat oven to 300F. Mix all ingredients and bake covered
- 3-4 cans mixed beans rinsed and drained
- 2 Tbsp minced fresh ginger
- 2 Tbsp dijon
- 2-3 tsp five spice powder
- 1/2 cup maple syrup
- 1/4 cup dark molasses
- 2 Tbsp ketchup
- splash or two of vegetable stock
Vegan Egg White

Mix water and chia together in a small bowl
- 1 tsp chia seeds(or 1 tsp ground flax)
- 1/8 th cup water
Low Fat Herb Boursin-Style Cheese Spread

Amazing on sandwiches-roasted veggies & Boursin on multigrain bread
- Base:
- 4 oz Greek (or Greek-style) yogurt
- 4 oz Neufchatel cheese (any kind of cream cheese will do, but I like Neufchatel because it’s got 1/3 less fat than regular cream cheese)
- Flavorings (use anything you like, such as herbs, spices, dried fruits, nuts, etc.):
- 2 TB fresh minced chives
- ½ tsp garlic powder
Gluten Free Blueberry Muffins

1.In a small bowl, combine coconut flour, salt and baking soda 2
- ½ cup coconut flour, sifted
- ½ teaspoon celtic sea salt
- ½ teaspoon baking soda
- 6 eggs
- ⅓ cup agave nectar
- ⅓ cup grapeseed oil
- 1 tablespoon vanilla extract
- 1 cup blueberries, fresh or frozen
Pink Detox

My very favorite detox. Best consumed in the morning
- 1 large beet with its greens, juiced
- 3 red apples, juiced with seeds
- 4 stalks celery with its greens, juiced
- 1 inch-long piece of ginger, juiced or grated
Mint Chocolate Chip Ice "Cream"

This is a very simple & delicious summer chill-out delight
- 2 bananas, frozen and roughly chopped
- 2 tsp. raw honey (or to taste depending on the ripeness & sweetness of your bananas)
- scant 1/8 tsp peppermint ext. (a little goes a long way)
- 2 tsp. raw cacao nibs
Gluten Free Chocolate Cake

1.In a small bowl combine flour, cacao, salt and baking soda 2
- ¾ cup coconut flour, sifted
- ¼ cup cocoa powder
- 1 teaspoon celtic sea salt
- 1 teaspoon baking soda
- 10 eggs
- 1 cup grapeseed oil
- 1 ½ cups agave nectar
- 1 tablespoon vanilla extract
- ¼ teaspoon orange zest
Cranberry Tahini Dressing

Place all ingredients into blender and blend till smooth
- 2 tbsp tahini
- 1/3 cup orange juice or water
- pinch of orange zest
- 1/2 tsp sea salt
- 1-2 in fresh rosemary spring
- 1/2 cup fresh cranberries
- *Optional -drizzle in some maple syrup
ChickPea Walnut Burger

Set up grill for direct cooking over high heat
- 1 cup chopped walnuts
- 3/4 cup canned chickpeas, drained
- 1/3 cup plain dried bread crumbs
- 1 tablespoon grill seasoning
- 1 teaspoon smoked paprika
- 1/4 teaspoon red pepper flakes
- 1 tablespoon cider vinegar
- 1 tablespoons olive oil
- 1 large egg
- 4 hamburger buns
- Lettuce, tomato, avocado
- Honey mustard
Vegan Enchilada Casserole

On lowest oven setting dehydrate butternut squash and onion on trays for 1 1/2 hours
- 1/2 butternut squash peeled and cubed
- 2 medium onion, chopped
- 4 handfuls baby spinach
- 1-2 jars enchilada sauce or pasta sauce
- 2 tsp chili powder
- 2 dashes paprika
- 1 tsp cumin
- 1 tsp corriander
- 1/4-1/2 tsp sea salt, to taste
- 2 tsp nutritional yeast
- 2 tsp lime juice (optional)
- 2 cans cooked black beans, rinsed and drained
- *tortillas
- Toppers optional
- cheeze sauce: 4 tbsp hummus, 2 tsp "milk", 1/2 tsp nutritional yeast. Or zucchini hummus
- bell peppers, chopped
- chopped cilantro
- avocado slices
- *I used brown rice tortillas (very dry texture)-amazing softened up to add a creamy cheesey texture. Next time I will try sprouted grain tortillas!
