Impossible Pumpkin Custardy Pie

Yummy! A delicious healthy version of a pumpkin pie
- 1 1/2 cups almond milk
- 2 flax or chia eggs
- 1 tbsp. cornstarch
- 1 tsp. vanilla
- 2 cups pureed or mashed cooked pumpkin
- 1/2 cup brown rice flour (or flour of your choice)
- 2 tsp. baking powder
- 3/4 cup sugar
- 1/4 tsp. ginger powder
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/4 tsp. ground cloves
- 1/2 tsp. salt

Preheat the oven to 350 degrees F
- 2 1/4 cups (18-ounces) assorted unsalted nuts, including peeled peanuts, cashews, Brazil nuts, hazelnuts, walnuts, pecans and whole unpeeled almonds
- 2 tablespoons coarsely chopped fresh rosemary leaves
- 1/2 teaspoon cayenne pepper
- 2 teaspoons dark brown sugar

- 4 tablespoons lemon juice (vitamin C)
