Raw Vegan Chocolate Coconut Snow Balls

Mix all the ingredients together by hand
- 1.5 cups shredded coconut
- 3/4 c maple syrup (or agave to be technically raw)
- 3/4 c cocoa powder
- Dash Vanilla Extract
- 1/4 c coconut oil
- Optional: 1/4 c chia seeds

- 1-2 jars enchilada sauce or pasta sauce
- 2 bell peppers, chopped
- 2 zucchini, chopped
- 2 medium onion, chopped
- 2 tsp chili powder
- 1/4-1/2 tsp sea salt, to taste
- 2 tsp nutritional yeast
- 2 tsp lime juice (optional)
- 2 cans cooked black beans, rinsed and drained
- 12 whole grain tortillas
- Vegan cheeze sauce for the topping: (4 tbsp hummus, 2 tsp or a bit more milk, 1/2 tsp nutritional yeast)
Raw Spring Rolls

Stir together the sauce and add it to your filling – mix well
- Sauce:
- ¼ c. 100% Pure Maple Syrup
- ¼ c. Nama Shoyu or Tamari
- ½ tsp fresh ginger root – pressed or minced
- 1 med. garlic clove – pressed or minced
- Drizzle of toasted sesame oil
- Basic Filling:
- 1 Cup of shredded carrots & broccoli slaw (comes in a bag)
- Small handful of fresh basil leaves, whole
- Wraps: Cabbage Leaves or bib Lettuce or chard
- Optional filling ideas:
- Zucchini, julienned
- Cucumber noodles (made with a spiralizer)
- Mint leaves
- Cilantro
- Bell pepper, cut in to thin strips
Favorite Homemade Granola

In a medium saucepan over medium heat, add the wet ingredients
- DRY:
- 2.5 cups rolled oats (regular not instant)
- 1 cup raw almonds, roughly chopped
- 1/2 cup raw walnuts, roughly chopped
- 1/2 cup raw sunflower seeds
- 1/2 cup raw sesame seeds
- 2 tbsp ground flax
- 2 tbsp sweetened coconut flakes
- 1 tsp ground cinnamon
- Pinch of ground nutmeg
- 3/4 tsp kosher salt
- WET:
- 3-4 tbsp brown rice syrup
- 1 tbsp maple syrup
- 1 tbsp coconut oil
- 2 tbsp applesauce, unsweetened
- 2 tbsp peanut butter
- 1/3 cup packed brown sugar
- ADD INS:after baking
- 1/3 cup dried cranberries
- 1/3 cup raisins

- 1 cup sun-dried tomatoes
- 1 clove garlic
- 1 cup chopped tomatoes
- 1 cup water
- 1/2 cup grated cucumbers
- 3 tablespoons hemp oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon oregano
- 1 teaspoon rosemary
- 1/4 teaspoon thyme
- Sea salt to taste
- Topping
- 1 tomato, sliced
- 1/2 Spanish onion, diced
- 1 cup chopped celery
- 1/2 cup chopped basil
- 1/2 cup grated carrot
- 1/2 cup chopped green onions
Mango-Pineapple Salsa

Fine chop all the fruit; add jalapeno, fresh cilantro, onion and lime juice
- 4 pineapple slice rings (preferably fresh pineapple)
- 1 mango, seeded and peeled
- 1 jalapeno, minced with membrane and seeds removed
- 1/2 small red onion, finely mined
- 1/4 cup cilantro, finely minced
- juice of one lime
- salt & pepper, to taste

- small piece of ginger OR pinch of black pepper
- couple of dates
- 1/4 teaspoon flax powder (works as a thickener)

Walnut Cranberry Squash "Rice"

- 1 small butternut squash (1lb)peeled, seeded and cut into 2" cubes
- 1/2 small yellow onion, about 1/2 cup chopped
- 1 Tbsp cumin seeds
- 1 Tbsp coriander powder
- 1/2 cup cilantro leaves, chopped
- 1 cup dried cranberries
- 1 cup walnuts, crushed
