Heat a grill pan over high heat
- Salad:
- 3 (6-ounce) chicken breasts
- 1 tablespoon soy sauce
- 1 tablespoon vegetable oil
- 1 tablespoon grill seasoning
- 1/2 seedless cucumber, peeled, halved lengthwise and thinly sliced on an angle
- 2 cups fresh bean sprouts
- 1 cup shredded carrots, available in pouches in produce department
- 3 scallions, sliced on an angle
- 12 leaves basil, chopped or torn
- 3 tablespoons chopped mint leaves (4 sprigs)
- 1 tablespoon sesame seeds
- 2 teaspoons sugar
- 2 tablespoons rice wine vinegar or white vinegar
- Salt
- Spicy peanut sauce:
- 1/4 cup room temperature chunky peanut butter, soften in microwave if it has been refrigerated
- 2 tablespoons soy sauce
- 1 tablespoon rice wine vinegar or white vinegar
- 1/4 teaspoon cayenne pepper
- 2 tablespoons vegetable oil
- 4 (12-inch) flour tortilla wraps

Whole Wheat Vegan Pancakes

In large bowl, mix flour, sugar, baking powder, and salt
- 1 1/4 cups flour
- 2 tablespoons sugar — or other sweetener
- 2 teaspoons baking powder
- 3/4 teaspoon salt
- 1 1/3 cups almond milk
- 1 egg replacer (or 1 egg)
Polenta

Use an ice cream scooper to scoop polenta onto 4 plates
- 1 1/2 tsp sea salt
- 1 clove garlic
- 1/8 tsp pepper
- 1 1/2 cups raw cashews, dry
- 2 cups corn kernels, fresh or frozen (1 1/2 lbs)
- juice of 1/2 lemon (1Tbsp)
- 1 1/2 Tbsps yellow onion, chopped
Easy Raw Vegan Mayo

Blend to create a creamy mayo
- 1/2 cup water
- 1 cup raw macadamia nuts or cashews
- 1/2 lemon, juiced or 2 Tbsp Apple cider vinegar
- 1/4-1/2 tsp sea salt
- 1 chunk of onion or 1 tsp italian spices
- 1/2 date or 1 teaspoon Agave Nectar
- dash cayenne
Better Than Bottled Balsamic Vinaigrette

Toss all ingredients into a bowl and whisk! Makes about 1/2 cup of dressing
- 2.5 Tbsp balsamic vinegar
- 2 Tbsp apple cider vinegar
- 1 tsp Dijon mustard or regular mustard
- 2 Tbsp pure maple syrup
- 1/4 tsp sea salt
- Ground black pepper to taste
- 1/2 minced clove of garlic (optional)
- 2 Tbsp extra virgin olive oil
Beer Bread

- 3 cups flour
