Linguine with Creamy Lemon Sauce

Cook pasta until al dente
- 400 g fresh linguine
- 1/4 tsp saffron threads or powder, optional
- 1 1/4 C cream
- 1 C chicken stock

Souvlaki Sirloin Meatballs

- 1/4 C fresh or dried bread crumbs
- 1/4 C crumbled feta cheese (optional)
- 1 small onion, finely chopped
- 1 tsp dried oregano leaves
- 1 lightly beaten egg

Party Meatballs

Beat egg and salsa in medium bowl using fork, Stir in bread crumbs and taco seasoning nix
- Red Sauce:
- 1 large egg
- 1/4 C salsa
- 1/2 C fine dry bread crumbs
- 1 1/4 oz envelope taco seasoning mix
- 1 lb lean ground beef
- 1 C chili sauce
- 1/4 C brown sugar
- 1 tsp Worcestershire
- 2 T white vinegar
- 1/2 tsp salt
Cornmeal Muffins

- 1 C flour
- 3/4 C cornmeal
- 3 T sugar
- 1 T baking powder
- 1 tsp salt
- 1 egg
- 2/3 C milk
- 1/3 C melted butter
Marinated Chicken Satay

Marinade 1 hour. Grill chicken
- 1 pound boneless skinless chicken breast or thigh, cut into bite-sized pieces
- 1 large onion, grated
- 2 tablespoons lemon or lime juice
- 2 cloves garlic, crushed
- 2 teaspoons grated fresh ginger
- 2 teaspoons sambal oelek or crushed chillies
- 1/3 cup soy sauce
- 1 tablespoon sesame oil
Spinach and Lettuce Salad

In large salad bowl, combine spinach, lettuce, red onion, and pecans
- Dressing:
- 4 C torn fresh spinach
- 4 C torn boston lettuce
- 1/2 C sliced red onion
- 1/2 C pecan pieces, toasted
- 3 oranges
- 1 tsp finely grated orange rind
- 2 T orange juice
- 1 T each liquid honey, white wine vinegar and Dijon mustard
- 1/2 tsp poppy seeds
- 1/4 tsp each salt and pepper
- 2 T vegetable oil

Grease large muffin tins. Pour boiling water over cereal, butter and citrus rinds, in bowl
- 1 cup boiling water
- 1 1/2 cups Nabisco 100% Bran Cereal
- 1/4 cup butter
- 2 teaspoons grated orange rind
- 2 teaspoons grated lemon peel
- 1 egg
- 3/4 cup milk
- 1/2 cup packed brown sugar
- 2 cups flour
- 1/2 cup chopped pecans, or other
- 1 tablespoon baking powder

Pork Medallions with Medeira

Cut each tenderloin into 8 slices (partially freezing will make slicing easier)
- 2 pork tenderloin, about 3 / 4 Ib each
- 2 teaspoons ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons olive oil
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1/4 cup Madeira
- 1/4 cup water
- 1 tablespoon red wine vinegar
- 2 tablespoons butter
- 2 tablespoons chopped parsley, if desired
Scandiavian Dilled Pot Roast

Sprinkle all sides of meat with salt, pepper, and 1 tsp of the dill
- 1 , 3-3 1/2 lb beef rump or chuck roast
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 tsp dried dill weed
- 1/4 C water
- 1 T vinegar
- 4 tsp cornstarch
- 2 T water
- 1 C sour cream
