Easy Chicken Enchiladas

Philadelphia Cooking Creme recipe
- 1 small onion, chopped
- 2 tsp oil
- 3 cups shredded cooked chicken breasts
- 1 can (14.5oz) no salt added diced tomatoes, drained
- 1 tub (10oz) Philadelphia Santa Fe Blend Cooking Creme, divided
- 1/2 cup Mexican style finely shredded four cheese
- 8 flour tortillas (6")
Potato Salad "Buttered" and Lemoned

Recipe adapted from "Canal House Cooking"
- 4 slices good quality bacon
- 2 to 3 lbs potatoes (any variety will do; I used red Bliss potatoes)
- Salt
- 1 cup mayonnaise
- 1/2 cup good quality extra-virgin olive oil
- Pepper
- Zest from 1 lemon
- Chopped fresh chives or parsley
- Blue cheese, crumbled (optional, about 1/3 cup)
So Simple Three Bean Salad

- 1 can (14.5 oz) garbanzo beans, drained & rinsed
- 1 can (14.5 oz) dark red kidney beans, drained & rinsed
- 3/4 C diced green pepper
- 1/2 C diced red onion
- 1/4 C distilled or cider vinegar
- 1/4 C sugar
- 2 Tbsp canola oil
- 1/2 tsp celery seed
- 1/4 tsp salt
- 1/8 tsp ground black pepper
Summer Spritz

- 1 1/2 cups pineapple juice

- Ice, for serving

Frittata

Heat the oil over medium heat in a large nonstick (and ovenproof) pan
- 3 Tbsp olive oil
- 1/4 cup sliced green onions
- 1/4 cup diced ham or prosciutto
- 2 oz chopped mushrooms
- 6 eggs
- salt
- freshly ground pepper
- 1/4 cup shredded mozzarella cheese
Coffee Cup Quiche

Beat egg and milk together with fork in a coffee cup, adding salt and pepper to taste
- 1 egg
- 1 1/2 Tbsp milk
- Salt and pepper to taste
- 1/4 of a bagel (or similar amount of French bread, etc)
- 2 tsp cream cheese
- 1/2 slice prosciutto or ham
- Fresh thyme leaves or fresh chopped chives
- Dijon mustard
Pork Schnitzel

- Dill Sauce:
- 6 boneless pork cutlets (1/2" thick and 4 oz ea)
- OR 1-1/2 lb pork tenderloin, cut into 1" pcs, pounded to 1/4" thick
- 1/2 cup all-purpose flour
- 2 tsp seasoned salt
- 1/2 tsp pepper
- 2 eggs
- 1/4 cup milk
- 1-1/2 cups dry bread crumbs
- 2 tsp paprika
- 6 Tbsp vegetable oil
- 1-1/2 cups chicken broth, divided
- 2 Tbsp all-purpose flour
- 1/2 tsp dill weed
- 1 cup (8oz) sour cream

- 16 Oz Cream Cheese, room temperature, Trader Joe's brand is the best
- 1/2 Cup + 2 Tablespoons Granulated Sugar
- 2 Large Eggs, room temperature
- 2 Tablespoons Sour Cream, room temperature
- 1/2 Teaspoon Lemon Juice
- 1 1/2 Teaspoons Vanilla Extract
- 1 Tablespoon Cornstarch
- 7 Inch Springform Pan
- CRUST
- 1 Cup Fine Cookie Crumbs, I use Trader Joe's Ultimate Vanilla Wafers
- 2 Tablespoons Granulated Sugar
- 2 Tablespoons Unsalted Butter
- SOUR CREAM TOPPING
- 3/4 Cup Sour Cream
- 2 Tablespoons Granulated Sugar
- 1/2 Teaspoon Vanilla Extract
Gyro Sauce

Mix ingredients together and chill
- plain or Greek yogurt
- cucumber, peeled, seeded and chopped
- dill
- garlic powder
- Morton's seasoning salt or salt & pepper
- lemon juice
Dark chocolate-espresso cheesecake with triple berry-beet coulis

- For the Cheesecake:
- 2 and 1/2 cups finely crushed chocolate graham-cracker crumbs
- 1 scant pinch kosher salt
- 1/2 cup plus 2 tablespoon butter
- 2/3 cup granulated sugar
- 1 tablespoon fine espresso powder
- 12 oz. dark baking chocolate, approx 70% cocoa (such as Lindt)
- 4 8 oz. packages (2 lbs. total) cream cheese, room temperature
- 3 large eggs
- 3 tablespoons heavy cream (at room temperature)
- 1 teaspoon vanilla extract
- For the Coulis:
- 1 cup each raspberries, blueberries, strawberries.
- 1 cup red beets, steamed, peeled and chopped
- 1 cup orange juice
- 3/4 cup sugar
