Garlic Bread Bowl with Spicy Pizza Dip

Position a rack in the middle of the oven; preheat to 400 degrees
- 1 1 pound round loaf soft italian or french bread
- 3 tablespoons EVOO
- 2 large cloves garlic, 1 halved
- 1/2 cup chopped onion
- 10 ounces hot italian sausage
- 1 16 ounce jar pizza sauce
- 4 ounces fresh mozzarella, thinly sliced
- 1 tablespoon freshly grated parmesan
- 1 tablespoon fresh oregano leaves
Olive Oil for Dipping Bread

Add ingredients to olive oil, and let sit for several days
- 1 16oz bottle EVOO
- 6 cloves roasted garlic
- 3 - 4 sprigs of fresh rosemary
- 1 dried red pepper, chopped small
Cranberry Bog Turkey Burgers

- 2 Tbsp butter
- 1 sm McIntosh or Honeycrisp apple, peeled, cored and finely chopped
- 1 rib celery, from the heart, finely chopped
- 1 sm white onion, chopped
- 1 rounded tsp poultry seasoning
- Kosher salt and pepper
- 1-1/2 lbs ground turkey
- vegetable oil, for drizzling
- 1 cup prepared whole-berry cranberry sauce
- 1/2 cup mayo or soy mayo
- 4 sandwich-size sourdough English muffins, split and toasted
- 8 leaves Bibb lettuce
Eggplant Parmesan

Preheat oven to 400 deg. Spray 2 baking sheets with vegetable cooking spray
- 3 egg whites, lightly beaten
- 1/4 cup water
- 2 small eggplants, cut horizontally into 1/4" thick slices
- 1/3 cup all-purpose flour
- 1-1/2 cups dried Italian bread crumbs
- 1 28oz can crushed tomatoes
- 1-1/2 cup shredded part-skim mozzarella cheese
- 2 Tbsp grated Parmesan cheese
Ranch Hash Brown Potatoes

Put hash brown potatoes in slow cooker
- 2 bags (24 oz each) frozen hash brown potatoes, partially thawed
- 2 packages (8 ounces each) cream cheese
- 2 envelopes Hidden Valley Ranch dressing mix
- 2 cans cream of potato soup
Cheese Ravioli with Mushrooms and Spinach

In a large pot of boiling, salted water, cook the ravioli according to pkg directions
- 2 pkg fresh (9oz) or 1pkg frozen (20oz) cheese ravioli
- 3 Tbs butter
- 1/4-1/3 cups fresh breadcrumbs
- salt and pepper
- 8 oz fresh white sliced mushrooms
- 3 cloves garlic, finely chopped
- 8 oz fresh baby spinach
- extra virgin olive oil
Garlic-Rosemary Lamb Chops

Rub mixture can be used on pork chops, too
- 1 Tbsp bottled minced garlic
- 1-1/2 tsp dried rosemary, crushed
- 1/4 tsp salt
- 1/4 tsp black pepper
- 8 4oz lamb rib chops, trimmed
- Cooking spray
Scallops and Roasted Asparagus

Preheat oven to 400 deg. Rinse and dry the scallops
- 6 large sea scallops (about 2 oz each)
- Sea salt or kosher salt and fresh ground black pepper to taste
- Lemon pepper seasoning to taste or Mrs Dash
- 1 tsp crushed dried tarragon or basil
- 10 asparagus spears, rinsed well, ends trimmed
- 2 Tbsp olive oil, divided
- 1/3 cup white wine or chicken broth
- 1/4 cup balsamic vinegar
Skillet Sicilian Chicken

Preheat oven to 350 degrees F
- 1 tbsp. extra-virgin olive oil
- 5 bone-in, skin on chicken thighs (I use boneless, skinless so it's less greasy)
- 2 cloves garlic, minced
- 1 tbsp. fresh thyme leaves
- 1 tsp. crushed red pepper flakes
- 3/4 c. low-sodium chicken broth
- 1/2 c. heavy cream (I substituted condensed skim milk to cut down the fat)
- 1/2 c. chopped sun-dried tomatoes
- 1/4 c. grated Parmesan
- Kosher salt and black pepper
- Fresh basil, for serving
Tequila Sunrise

- 1-1/2 oz grenadine
- 6 oz orange juice
- 3 oz tequila
- cherries (optional)
