Penzy's Big and Chewy Oatmeal Raisin Cookies

1. Preheat oven to 350 degrees
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1/4 teaspoon freshly ground Nutmeg
- 2 sticks butter (unsalted), softened
- 1 1/2 teaspoons pure vanilla extract
- 1 cup light brown sugar, packed
- 3/4 cup granulated sugar
- 2 large eggs
- 3 cups oatmeal
- 1 1/2 cups raisins
Zucchini Fritters

Preheat oven to 400 degrees
- 2 cups grated zucchini squash
- 1/4 cup all purpose flour
- 1/3 cup cornmeal
- 1 small onion, finely chopped
- 1 clove of garlic, finely minced
- 1 egg
- 1/4 cup grated Parmesan cheese
- Kosher salt and black pepper to taste
Baked Buffalo Ranch Chicken Taquitos with Blue Cheese Dipping Sauce

For the Taquitos: Preheat the oven to 425 degrees F
- For the taquitos:
- 2 Tablespoons unsalted butter
- 2-3 boneless chicken breasts, cut into 1-inch pieces
- Seasoned salt
- 1/2 cup buffalo ranch dressing (homemade or store-bought)
- Hot sauce (optional)
- 2 Tablespoons chopped green onions
- 1/2 cup shredded sharp cheddar cheese
- 8-10 small flour tortillas
- Cooking spray
- Kosher salt
- For the dipping sauce:
- 1 cup whole milk
- 1 Tablespoon unsalted butter
- 1/2 small yellow onion, finely chopped
- 1 Tablespoon all-purpose flour
- 1/8 teaspoon kosher salt
- Pinch cayenne pepper
- 1/4 pound crumbled blue cheese
LEMON PEPPER SALMON in Foil

- 1 tsp butter
- 1 or 2 slice lemon, thin
- 1 pinch sugar
- 1 4 to 6 oz. salmon filet
- 1 pinch sea salt
- 1 pinch (generous) freshly ground black pepper
- 1 dash(es) old bay seasoning or cajun (optional)
- 1 pinch chopped parsley, fresh or dried (optional)
- 1 dash(es) fresh lemon juice

- 3 cups granulated sugar
- 2/3 cup Evaporated Milk
- 3/4 cup butter
- 1 – 7 oz Jar Marshmallow Cream
- 1 cup Peanut Butter
- 1 Tea Spoon Vanilla

This mild and meaty Southwestern dish combines the delicious flavor of tacos with the heartiness of burritos
- Ingredients
- 1/4 cup butter, cubed
- 1/4 cup all-purpose flour
- 4 cups water
- 3 tablespoons chili powder
- 1 teaspoon garlic salt
- 1 pound ground beef
- 1 pound bulk pork sausage
- 1/4 cup chopped onion
- 1 cup refried beans
- 8 flour tortillas (8 inches), warmed
- 3 cups (12 ounces) shredded Monterey Jack cheese
- Optional toppings: shredded lettuce, chopped tomatoes, sliced ripe olives and sour cream

- 3 cups water
- 4 cubes chicken bouillon (or just replace water with chicken broth)
- 1 can green chilies

- 2 cups sugar
- 4 eggs
- 1 tsp. vanilla
- 1/2 cup unsweetened cocoa
- 1 1/3 cups flour

- 1 pkg. Double Stuffed Oreos
- 4 oz. cream cheese, softened, add more as needed
- 10 oz. Dipping Chocolate, I used chocolate almond bark
