California Breakfast Casserole

◦Layer the bottom of a greased 9x13 pan with sausage topped with tomatoes and avocado
- 12 precooked (frozen) breakfast
- sausage patties, thawed
- 2-3 sliced tomatoes
- 2-3 sliced avocados
- 12 eggs or sub the eggs for an egg substitute (the kind that comes in a carton).
- 1 c. milk
- 1 Pound pkg. frozen hash browns, thawed
- 1 c. cheddar cheese (shredded)
- 1 tsp. salt
- 1/2 tsp pepper
- extra cheddar cheese for topping
- 9 X 13 GLASS PAN
- option: You can assemble and let sit overnight without baking. That way it tastes fresh when you bake it up the next morning or bake night before and reheat in microwave the next day.

- 2 tbsp cider vinegar
- 1/3 cup fresh squeezed, I repeat FRESH squeezed lime juice
- the zest of one lime or about 1 tbsp
- 1 tsp salt
- few cracks of black pepper, a pinch or so
- 1/2 tsp ground cumin
- 1 tbsp sugar (any sugar substitute will work also)
- 1/2- 2/3 cups oil (vegetable or canola)
- 1-2 whole garlic cloves, peeled
- 1 bunch fresh cilantro ( I like ALOT)

Heat vegetable oil in a large saucepan over medium heat
- 1 tablespoon vegetable oil
- 1 chicken gizzard
- 2 tablespoons minced green bell pepper
- 1/4 cup ground beef
- 1/4 cup ground pork
- 2 cups water
- 1 14 ounce can beef broth
- 2 tablespoons cornstarch
- 1 tablespoon all-purpose flour
- 2 teaspoons milk
- 2 teaspoons distilled white vinegar
- 1 teaspoon granulated sugar
- 1 teaspoon salt
- 1/2 teaspoon coarse ground black pepper
- 1/4 teaspoon cayenne pepper
- 1/8 teaspoon garlic powder
- 1/8 teaspoon onion powder
- 1 dash dried parsley flakes

Emeril Lagasse Recipe from "New New Orleans Cooking", by Emeril Lagasse and Jessie Tirsch
- Essence (Emeril's Creole Seasoning):
- 1/2 cup all-purpose flour
- 1 tablespoon Essence, recipe follows
- 2 (6 to 8-ounce) boneless, skinless chicken breasts, cut in halves and pounded thin
- 1 tablespoon olive oil
- 4 tablespoons butter
- 3 cups sliced mushrooms (cremini, oyster, shiitake)
- 3/4 cup dry Marsala
- 1 cup chicken stock
- Salt and freshly ground black pepper
- Chopped chives, for garnish
- 2 1/2 tablespoons paprika
- 2 tablespoons salt
- 2 tablespoons garlic powder
- 1 tablespoon black pepper
- 1 tablespoon onion powder
- 1 tablespoon cayenne pepper
- 1 tablespoon dried leaf oregano
- 1 tablespoon dried thyme
- Combine all ingredients thoroughly and store in an airtight jar or container.
- Yield: about 2/3 cup
