Pulled Pork

Place pork in a medium size pot
- 4 pound boneless pork roast or pork chops (with fat)
- 1/2 cup favorite BBQ sauce
- 1/4 cup apple cider vinegar
- 1/4 cup chicken broth
- 2 Tbsp. sugar
- 1 1/2 tsp. yellow mustard
- 1 1/2 tsp. Worcestershire sauce
- 1 1/2 tsp. chili powder
- 1/2 tsp. onion powder
- 1/2 tsp. garlic powder
- 2 Tbsp. butter
Prime Rib

Spread steak seasoning in a shallow baking tray
- 4-8 pound prime rib roast, cut off bone, tied back to ribs
- 1/2-1 jar Montreal Steak Seasoning
- 1 can beef broth
- 1 can beef consommé
- 1/2 tsp. allspice
Garlicky Spinach Balls

In a large bowl, combine the first 11 ingredients
- 2 cups crushed seasoned stuffing
- 1 cup finely chopped onion
- 3/4 cup egg substitute
- 1 egg, lightly beaten
- 1/4 cup grated Parmesan cheese
- 1/4 cup butter, melted
- 3 tablespoons reduced sodium chicken or vegetable broth
- 1 garlic clove, minced
- 1 1/2 teaspoons dried thyme
- 1/4 teaspoon pepper
- 1/8 teaspoon salt
- 2 (10 ounce) packages frozen chopped spinach, thawed and squeezed dry
Kahlua Truffle Triangles

Position an oven rack in the center of the oven and heat the oven to 350°F
- For the crust:
- 6-3/4 oz. (1-1/2 cups) all-purpose flour
- 3 oz. (3/4 cup) confectioners’ sugar
- 1/4 tsp. table salt
- 6 oz. (12 Tbs.) cold, unsalted butter,cut into 10 pieces, more for the pan
- 1/2 tsp. pure vanilla extract
- Tip: For the best results, measure your flour by weight instead of volume. (1 cup of all-purpose flour equals 4-1/2 oz.) If you don’t have a scale, be sure to use the proper technique when filling you
- 1 lb. semisweet or bittersweet chocolate, broken into squares or very coarsely chopped
- 3/4 cup whole or 2% milk
- 4 oz. (8 Tbs.) unsalted butter, cut into 6 pieces
- 4 large eggs
- 2/3 cup granulated sugar
- 2 Tbs. Kahlúa
Macaroni and Cheese

In a medium saucepan, melt 4 Tbsp
- 4 Tbsp. butter
- 4 Tbsp. flour
- 2 1/2 cups milk (evaporated milk works great!)
- 16 ounces sharp cheddar cheese, cubed
- 1/4 tsp. pepper
- 1/2 tsp. salt
- 1 box (one pound) elbow macaroni (preferably with lines)
- 2 slices white bread, run through food processor to make crumbs
- 2 Tbsp. additional butter, melted
Swiss Spinach Dip

Combine all ingredients in a microwave safe bowl or crock pot
- 1 package (8 ounces) cream cheese, softened
- 1 tsp. garlic powder
- 1 package (9 ounces) frozen creamed spinach, thawed
- 2 cups diced Swiss cheese
- 1/2 tsp. onion powder
- One pound round sourdough loaf (if desired)
Cappuccino Smoothies

In a blender, combine the yogurt, milk, sugar if desired and chocolate syrup
- 1 cup (8 ounces) cappuccino or coffee yogurt
- 1/3 cup whole milk
- 3 tablespoons confectioners' sugar, optional
- 1 tablespoon chocolate syrup
- 1-1/2 cups ice cubes
- 1/2 cup miniature marshmallows, divided
Taco Dip

Melt Velveeta cheese in pan, add all spices, brown hamburger, drain and add to cheese
- 1 tsp. garlic powder
- 1 block Velveeta Cheese
- 1 lb. hamburger
- 1 jar salsa
- 1 packet taco seasoning
- 1 tsp. chili powder
- 1 tsp. crushed red pepper
- 1 tsp. cumin
Pigeons (Stuffed Cabbage Rolls)

Mix together the first 8 ingredients with your hands
- 2 medium cabbages
- 1 large onion, finely chopped
- 2 pounds 80% lean hamburger
- 2 eggs, slightly beaten
- 1 cup cooked rice (Uncle Ben’s)
- 1 Tbsp. Crisco shortening
- Salt and pepper to taste
- Garlic powder to taste
- 1 large can or jar of sauerkraut
- 1 can tomato paste
Hungarian Goulash

- 6 to 8 pork chops
- 1 medium cabbage
- 1 No. 2 can tomato juice
- 1 medium onion, diced
- 1 clove garlic, minced
- Salt and pepper to taste
