Almost-Famous Spinach-Artichoke Dip

1. Bring a large pot of salted water to a boil
- kosher slat
- 2 10-ounce bags spinach, stems removed
- 1 Tablespoon unsalted butter
- 2 Tablespoons minced onion
- 1 clove garlic, minced
- 2 teaspoons all-purpose flour
- 1 1/4 cups whole milk
- 1/2 teaspoon fresh lemon juice
- 1 teaspoon Worcestershire sauce
- 1 1/4 cups grated parmesan cheese
- 1/4 cup sour cream, plus more for serving
- 1/2 cup shredded white sharp cheddar cheese
- 1/2 cup frozen artichoke hearts, thawed, squeezed dry and roughly chopped
- tortilla chips and salsa, for serving
Hearty Beef Chili

1. Rub chuck roast with oil
- 1 (2 1/4 to 2 1/2 lb.) chuck roast
- 1 Tablespoon olive oil
- 1 tsp pepper
- 1 (16 oz.) jar pico de gallo
- 1 c frozen chopped onion
- 1 pkg chili seasoning
- 2 c beef broth
- 1 (6 oz.) can tomato paste
Cabbage-Potato Mash

Boil potatoes in salted water until tender
- 1 pound quartered, peeled Yukon gold potatoes
- 2 cups shredded cabbage
- butter
- 2 sliced scallions
- 1/2 cup half-and-half
- 2 Tablespoons butter

Chocolate Sugar Cookies

- 2 cups melted butter
- 4 one-ounce squares semi-sweet chocolate
- 2 cups powdered sugar
- 1 cup white sugar
- 2 eggs
- 2 teaspoons vanilla
- 1 teaspoon orange zest (optional)
- 1 teaspoon baking soda
- 1 teaspoon cream of tartar
- 1 teaspoon salt
- 4 1/4 cups flour (not sifted)
- 1/2 cup white sugar in small bowl (for later)
Buttermilk-Pecorino Salad Dressing

Shake ingredients together in a lidded container
- 3/4 cup low-fat buttermilk
- 3/4 cup finely grated Pecorino Romano cheese
- 2 Tablespoons plain yogurt
- 1 Tablespoon extra-virgin olive oil
- 1 teaspoon finely grated lemon zest
- 2 teaspoons fresh lemon juice
- 1/2 teaspoon freshly ground pepper
- 1/4 teaspoon coarse salt
Salmon and Spinach in Parchment

1. Preheat oven to 400F. Divide spinach among four 16-inch-long pieces of parchment paper
- 8 ounces baby spinach (8 cups)
- 1 Tablespoon grated orange zest, plus 3 oranges, peeled and sliced into 1/4-inch-thick rounds
- 4 skinless salmon filets (1 1/2 pounds total)
- 2-inch piece fresh ginger, peeled and cut into thin strips (1/4 cup)
- 1 shallot, thinly sliced

Paula Deen's Baked Spaghetti

- 2 cups canned diced tomatoes
- 2 cups tomato sauce

Easy Chicken Bake

Heat oven to 400F. Prepare stuffing mix as directed on package
- 1 package (6 ounce) stuffing mix for chicken
- 1 1/2 pounds boneless skinless chicken breast, cut into bite size pieces
- 1 can condensed cream of chicken soup
- 1/3 cup sour cream
- 1 package (16 ounce) frozen mixed vegetables, thawed, drained

- 2 packages (8 oz.) cream cheese
- 3 small or 2 large Buddig beef (chopped)
- 6 green onions (chopped)
- dash Accent
- dash Worcestershire sauce

- 1 cup brown sugar, firmly packed
- 1/2 cup maple syrup
- 1 chop chopped pecans, optional
- 1 loaf sliced bread

- 2 cups canned or fresh fruit, (any kind except melon or grapes)
- 8 eggs, beaten
- 3/4 cup sugar
- 2 teaspoons cinnamon
