Ranch Chicken Salad BLTs

1. In a medium bowl, stir together the yogurt, mayonnaise, thyme and garlic
- 1/3 c Greek yogurt
- 1/4 c mayonnaise
- 2 tsp. chopped fresh thyme
- 1 small clove garlic, finely grated
- 1 lb. shredded roast chicken
- 1/2 lb. bacon, cooked and chopped

- 1 small head Boston lettuce, leaves separated

Pomegranate-Glazed Acorn Squash

1. In a large pot, melt butter over medium
- 3 Tablespoons unsalted butter
- 1 medium yellow onion, diced small
- 1 medium head cauliflower, trimmed and cut into 1 1/2-inch pieces
- 4 cups low-sodium chicken broth, plus more if desired
- 5 1/2 ounces sharp white cheddar, grated (1 1/2 cups)
