- 1/2 cup cashew butter (see note)
- 2/3 cup vanilla soy yogurt
- 2 teaspoons agave nectar
- 1/8 teaspoon sea salt
- 1/8 teaspoon (rounded) cinnamon
Pastry-Dal Baati

- Ingredients:
- For the Baati – Pastry
- 3/4 cup whole wheat flour
- 1/4 cup white flour (unbleached white or all purpose flour)
- 3 tbsp semolina flour
- 1/3 tsp carom seeds (ajwain) or use cumin seeds
- 1/2 tsp salt
- 1/4 tsp baking soda
- 2 tbsp vegan butter
- 1 tbsp non dairy yogurt
- 1/4 to 1/3 cup water
- For the Baati filling:
- 3 medium potatoes, boiled and mashed well
- 1/2 tsp oil
- 1/4 tsp cumin seeds
- 1/2 inch ginger minced, 2 tsp
- 1 hot green chili minced
- 1/2 tsp coriander powder
- 1/4 tsp cumin powder
- 1/2 tsp turmeric
- 1/4 to 1/2 tsp cayenne/red chili powder
- 3/4 to 1 tsp dry mango powder (amchoor) or use lemon juice to taste
- 1/2 cup thawed or fresh green peas
- To serve:
- Melted vegan butter or olive oil as needed

- 2 to 3 teaspoons Dijon mustard
- 1 1/2 teaspoons low-sodium soy sauce

Missy’s Marinated Tomatoes

Combine all ingredients except tomatoes in a large glass bowl
- 1 cup Canola Oil
- 1/4 cup Balsamic Vinegar
- 4 Tablespoons Sugar
- 1 teaspoon Salt
- Freshly Ground Black Pepper
- 3 whole Green Onions, Sliced
- 1/4 cup Chopped Parsley
- 18 whole Basil Leaves (chiffonade)
- 1/4 teaspoon Ground Thyme
- 2 cloves Garlic, Minced Finely
- 2 pounds Tomatoes, Cut Into Quarters (if Big) Or Halves (if Small)
- 1 whole Baguette, Sliced

Lemon Roasted Fennel with Olives and Breadcrumbs

Preheat the oven to 400˚F
- 4 large fennel bulbs
- 1 lemon, thinly sliced
- 1 Tbsp extra-virgin olive oil
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 1/4 tsp dried thyme
- Juice from 2 large navel oranges
- 1/4 cup sliced kalamata olives
- 2 Tbsp sliced green olives
- 2 tsp minced roasted lemons
- 1/4 cup yellow raisins
- 2/3 cup Panko or homemade breadcrumbs
- 2 Tbsp gorgonzola
- 1 navel orange, peeled and finely chopped
