- 1 bunch broccoli rabe (about 1 1/2 pounds)
- 10 garlic cloves, peeled and smashed
- 5 tablespoons extra-virgin olive oil
- Salt and freshly ground black pepper
- 2 cups water
- 1 cup quinoa
- 1/4 teaspoon ground cumin
- 1 tablespoon honey
- Juice of 1 lime (about 2 tablespoons), plus more for seasoning
- 1/2 cup loosely packed fresh mixed herbs such as mint and cilantro, roughly chopped
- 1/2 large carrot, peeled, thinly sliced and cut into matchsticks
- 1/4 cup almonds, toasted and roughly chopped
- 1/4 cup golden raisins

1. Preheat oven to 375º F
- INSTRUCTIONS:
- 4 acorn squash, halved lengthwise; seeds and membrane removed (see note)
- 1 cup organic brown rice
- 1/2 cup wild rice
- 4 cups vegetable broth or water
- 1/4 teaspoon sea salt
- 1 TBSP olive oil
- 1 medium onion, chopped
- 3/4 cup diced celery
- 1/2 cup pecans, coarsely chopped (you may use any nut of your preference)
- 1/2 cup dried apricots, diced
- 1/2 cup cranberries
- 1/2 teaspoon sea salt
- 2-1/2 teaspoon ground ginger
- 1/8 teaspoon each ground black pepper
- 1/8 teaspoon ground cardamom
- 1/8 teaspoon ground cloves
- 1 teaspoon ground cinnamon

1. Combine nut milk with honey ( or sweetener of choice) until honey is dissolved
- Toppings and extra sweetener of choice, if needed:
- 2 cups cashew milk (can use almond milk, coconut milk or milk of choice)*
- 1/4 cup honey, to taste (or other sweetener of choice)
- pinch of salt
- pinch of freshly grated nutmeg
- pinch of cinnamon
- pinch of cardamon, optional
- a few gratings of orange peel (or citrus of choice)
- 1/3 cup chia seeds, can use a bit more if you want it much thicker
- vanilla, I didn't use, but it would be great
- to make nut milk, soak nuts(if desired overnight) add 1 cup nuts to about 3 cups water, blend till smooth and creamy
- dried chopped fruit~ dates, raisins, blueberries, cranberries, cherries, apricots, etc
- chopped nuts~ walnuts, pecans, pistachios, almonds, hazelnuts, peanuts, toasted coconut flakes, etc
- maple syrup, honey
- Other ideas~ chopped chocolate, cacao powder, fresh fruits

1. Wash and rinse quinoa well
- 2/3 cup golden quinoa
- 1 1/3 cup water
- ~~~~~~~~~~~
- 2-4 TBS lemon juice, freshly squeezed
- 3-4 TBS extra virgin olive oil
- 2-4 TBS flat leaf parsley, chopped
- 1-2 TBS mint, chopped
- 2 scallions, finely chopped
- 2 roma tomatoes, peeled, seeded and diced (I don't bother with peeling and seeding)
- 1 small cucumber, diced (I like to use the small Persian cucumbers)...optional
- 1/3-1/2 cup chopped pecans
- salt and pepper to taste
