Combine egg, crumbs, milk, mustard, salt and pepper; crumble beef over mixture and mix well
- Sauce:
- 1 egg, lightly beaten
- 1/4 cup dry bread crumbs
- 1/4 cup milk
- 1/2 tsp. dry mustard
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 pound ground beef
- 1 Tbsp. vegetable oil
- 1 cup chopped onion
- 2 garlic cloves, minced
- 1 Tbsp. vegetable oil
- 2 Tbsp. all-purpose flour
- 1-1/2 cups beef broth
- 1 can (14-1/2 ounces ) diced tomatoes, undrained
- 2 Tbsp. tomato paste
- 1 bay leaf
- 3/4 tsp. dried thyme
- 1/2 tsp. salt
- 1-1/2 cups sliced carrots
- 1-1/2 cups chopped zucchini
- 1 cup chopped green pepper
- 1 cup chopped sweet red pepper
- 1 Tbsp. minced fresh parsley
- 2 cups cooked pasta
Rigatoni Florentine

Cook pasta according to package directions
- 12 ounces uncooked rigatoni or large tube pasta
- 1-1/2 cups diced fully cooked turkey ham
- 1 cup sliced fresh mushrooms
- 1 medium sweet red pepper, julienned
- 1 medium sweet yellow pepper, julienned
- 2 garlic cloves, minced
- 2 Tbsp. olive oil
- 3/4 cup reduced-sodium chicken broth
- 1/4 tsp. pepper
- 1-3/4 cups fresh baby spinach
- 1/2 cup grated Parmesan cheese
A Rainbow of Grilled Peppers

Preheat the broiler. Stem the peppers and cut them in half lengthwise
- 2 red bell peppers
- 2 yellow bell peppers
- 2 orange bell peppers
- 2 Tbsp. extra-virgin olive oil
- Salt and freshly ground black pepper, to taste
- 3 large cloves garlic, thinly sliced
- 1 Tbsp. large capers, drained
- 1 Tbsp. whole fresh oregano leaves
- 8 slices peasant bread, toasted, for serving
Turkey Club and Avocado Wrap

To assemble the wraps, place the tortillas in a row
- 4 (10-inch) whole wheat tortillas, warmed
- 1/2 pound thinly sliced smoked turkey, preferably peppered
- 8 slices bacon, chopped and cooked
- 1 cup fresh baby spinach
- 1 cup diced Haas avocado
- 1 cup diced roasted red bell pepper
- 3 Tbsp. chopped fresh flat-leaf parsley
- 1 tsp. freshly squeezed lime juice
- Kosher salt and freshly ground black pepper

- 2 tsp. butter
- 2 cups sliced mushrooms
- 2 green onions, sliced
- 4 ounces herb and garlic cream cheese
- 1 cup frozen peas
- 1/2 cup milk
- 1/3 cup freshly grated Parmesan cheese
- 8 ounces fusilli, penne or other tube-shaped pasta
- Salt and freshly ground black pepper
Mexican Baked Eggs

Directions Heat the oil in a pan over medium heat
- 1 tablespoon corn oil
- 1 small onion, diced
- 2 cloves garlic, chopped
- 1 teaspoon cumin, toasted and ground
- 1 teaspoon chipotle chili powder
- 2 jalapeno peppers, diced
- 1 (28 ounce) can diced tomatoes or 4 cups diced fresh tomatoes
- 1 (19 ounce) can black beans, rinsed and drained
- 1 teaspoon oregano
- salt and pepper to taste
- 1 handful cilantro, chopped
- 4 eggs
- 1/2 cup grated cheese such as jack and cheddar
Rio Grande Quesadillas

In a saucepan, bring the chicken, water and taco seasoning to a boil
- 2 cups shredded cooked chicken
- 3/4 cup water
- 1 envelope taco seasoning
- 1 cup refried beans
- 6 flour tortillas (7 inches)
- 1 jar (2 ounces) diced pimientos, drained
- 1/4 cup chopped green onions
- 1/4 cup minced fresh cilantro
- 1-1/2 cups (6 ounces) shredded Monterey Jack cheese
- 1 to 2 Tbsp. vegetable oil

- 1 package (16 ounces) farfalle (bowtie) pasta
- 6 Tbsp. butter or margarine
- 3 cloves garlic, finely chopped
- 6 Tbsp. all purpose flour
- 1/3 cup dry vermouth or chicken broth
- 2 3/4 cups half and half
- 1/2 cup clam juice
- 1 Tbsp. tomato paste or ketchup
- 3/4 tsp. salt
- 1/4 tsp. pepper
- 1 pound uncooked peeled deveined medium shrimp, thawed if frozen
- 2 Tbsp. chopped fresh or 2 tsp. dried dill weed
- 3/4 cup freshly grated Parmesan cheese
Pan-roasted sizzling shrimp

Heat oil in heavy large skillet over high heat
- 2 Tbsp. olive oil
- 12 uncooked large shrimp, peeled and deveined
- 1 red bell pepper, seeded and cut into thin strips
- 1 fresh Anaheim chile, seeded and cut into thin strips
- 1/2 jalapeno chile, cut lengthwise, seeded and cut into thin strips
- 1/2 small onion, cut into thin strips (about 1 cup)
- 1 garlic clove, minced
- 1/2 tsp. ground cumin
- Chopped fresh cilantro
