- 2 Tbsp. sugar
- 1 egg
- 1/3 cup peanut butter
- 1 can (5 ounces) evaporated milk
- 1/3 cup water
- 1/4 cup butter, softened
- 2 Tbsp. honey
Rustic Lentil Soup

In a large stockpot, heat the olive oil and butter over medium heat until the butter starts to foam
- 2 Tbsp. olive oil
- 1 Tbsp. unsalted butter
- 2 ounces diced pancetta
- 2 strips bacon, diced
- 1 clove garlic, peeled and finely chopped
- 2 carrots, chopped
- 2 ribs celery, chopped
- 1 onion, peeled and coarsely chopped
- 2 small plum tomatoes, peeled, cored and finely chopped
- 5 to 6 cups chicken stock
- 2 bay leaves
- 1 tsp. salt
- 1/2 tsp. fresh thyme leaves
- 1/2 tsp. fresh oregano leaves
- 1/4 tsp. hot red pepper flakes
- 1/8 tsp. freshly ground black pepper
- 1 1/2 cups green lentils, rinsed and drained
- 1 russet potato, peeled and diced
- 1 to 2 Italian sweet or hot sausage links (about 5 ounces)
One-Pot Italian Sausages Braised with Potatoes

With a fork, prick sausages all over and place in large saucepan over medium-high heat
- 1 lb. mild or hot Italian sausages
- 2 Tbsp. water (approx.)
- 1 Tbsp. olive oil
- 1 large onion, halved lengthwise, sliced
- 1 large bulb fennel, trimmed, cored and cut into strips
- 2 cloves garlic, finely chopped
- 1 tsp. dried oregano leaves
- 4 medium potatoes, peeled and cubed (about 1-1/2 lbs.)
- 1 can (14 ounces) tomatoes, including juice, chopped
- 1/2 cup beef stock
- 1/2 tsp. salt
- 1/4 tsp. freshly ground black pepper

- 2 eggs, lightly beaten
- 6 Tbsp butter, melted
- 1-1/2 tsp. salt
- 1/4 tsp. baking powder
- 7 to 8 cups all-purpose flour
Fish Tacos with Avocado Sauce

- SAUCE:
- 1/4 cup lemon juice
- 1 Tbsp. olive oil
- 3 garlic cloves, minced
- 1 pound halibut or tilapia fillets
- 2 medium ripe avocados, divided
- 1/4 cup fat-free sour cream
- 1/4 cup reduced-fat mayonnaise
- 1 Tbsp. lime juice
- 1 garlic clove, minced
- 1 tsp. dill weed
- 1/4 tsp. ground cumin
- 1/4 tsp. dried oregano
- 1/4 tsp. dried parsley flakes
- Dash cayenne pepper
- SALSA:
- 1 medium tomato, seeded and chopped

- 1 cup drained and rinsed canned garbanzo beans (chickpeas)
- 1 cup pitted whole Nicoise or Kalamata olives or sliced canned black olives
- 1 medium tomato, cored and cut into 1/4-inch dice
- 1 medium red onion, finely chopped (about 1 cup)
- 1/4 pound provolone cheese, sliced into 1/8-inch-thick matchsticks (about 1 cup)
- 1/4 pound Genoa salami, sliced into 1/8-inch-thick matchsticks (about 1 cup)
- 1 Tbsp. thinly sliced fresh basil
- 1/4 cup Mother's Greek/Italian Dressing
