- 1 can (12 ounces) fat-free evaporated milk
- 3/4 cup shredded reduced-fat cheddar cheese
- 1/2 cup sliced fresh mushrooms
- 1/4 tsp. pepper
- 2 Tbsp. real bacon bits
Cracked Pepper Cheddar Muffins

In a large bowl, combine the flour, sugar, baking powder and pepper
- 2 cups all-purpose flour
- 1 Tbsp. sugar
- 3 tsp. baking powder
- 1/2 tsp. coarsely ground pepper
- 1 egg
- 1-1/4 cups milk
- 2 Tbsp. vegetable oil
- 1 cup shredded cheddar cheese
Pesto Chili Peanuts

In a small bowl, whisk the pesto mix, oil, chili powder and cayenne
- 1 envelope pesto sauce mix
- 3 Tbsp. olive oil
- 1 tsp. chili powder
- 1/4 tsp. cayenne pepper
- 5 cups salted dry roasted peanuts
Homemade Chicken and Noodles

- 1 whole Cut Up Fryer Chicken
- 2 whole Carrots, Diced
- 2 stalks Celery, Diced
- 1/2 whole Medium Onion, Diced (optional)
- 1 teaspoon Salt
- 1/2 teaspoon Turmeric
- 1/4 teaspoon White Pepper (more To Taste)
- 1/4 teaspoon Ground Thyme

- 16 ounces, weight Frozen "homemade" Egg Noodles
- 3 Tablespoons All-purpose Flour

- 1/2 cup egg substitute
- 1 can (4 ounces) chopped green chilies
- 1 cup crushed cornflakes
- 1 cup (4 ounces) shredded reduced-fat Mexican cheese blend
- 1/2 tsp. seasoned salt
- 1/4 tsp. cayenne pepper
- 1 pkg. (1 lb.) ground chicken
- Salsa, optional
Crash Hot Potatoes

Bring a pot of salted water to a boil
- 12 * 12 whole New Potatoes (or Other Small Round Potatoes)
- 3 * 3 Tablespoons Olive Oil
- * Kosher Salt To Taste
- * Black Pepper To Taste
- * Rosemary (or Other Herbs Of Choice) To Taste
Chai-Spiced Slow Cooker Pear Applesauce

Combine all ingredients in slow cooker
- 4 medium apples, peeled, cored, and cut into large chunks (I use Fuji and Pink Lady)
- 4 medium pears, peeled, cored, and cut into large chunks
- 1 tsp. lemon juice
- 5 tsp. brown sugar
- 1 cinnamon stick
- 1 tsp. vanilla extract
- 1/2 tsp. ginger
- 1/2 tsp. ground cardamom
- 1/2 tsp. ground cloves
Pavia's Poached Egg Soup

Use a good country-style bread with an open crumb such as ciabatta
- 4 thick slices ciabatta bread, toasted and buttered
- 4 large eggs
- 4 Tbsp. grated Parmigiano-Reggiano cheese
- 4 cups very hot beef or chicken broth
Vegetable Lasagna

Preheat the oven to 400 degrees F
- Vegetable oil spray
- 26-ounce jar fat-free, low-sodium spaghetti sauce, such as tomato-basil
- 14-ounce can artichoke hearts, drained and coarsely chopped
- 7 - to 8-ounce jar roasted red bell peppers, rinsed, drained and coarsely chopped
- 15-ounce container fat-free or low-fat ricotta cheese
- 2 Tbsp. chopped fresh basil or 2 tsp. dried, crumbled
- 1/4 tsp. crushed red pepper flakes (optional)
- 4 oven ready dried lasagna noodles
- 1 cup shredded part-skim mozzarella cheese
- 1/4 cup chopped or very thinly sliced fresh basil or snipped fresh Italian or flat-leaf parsley (optional)
White Beans and Veggies with Couscous

In a large skillet, saute the zucchini, onion and garlic in oil until tender
- Couscous:
- 1 medium zucchini, quartered lengthwise and thinly sliced
- 1 medium onion, finely chopped
- 4 garlic cloves, minced
- 1 Tbsp. olive oil
- 1 can (15 ounces) white kidney or cannellini beans, rinsed and drained
- 1 can (14-1/2 ounces) diced tomatoes, undrained
- 1/2 tsp. dried basil
- 1/4 tsp. dried rosemary, crushed
- 1/4 tsp. pepper
- 1/8 tsp. salt
- 1-1/2 cups water
- 1 Tbsp. butter
- 1/4 tsp. salt
- 1 cup uncooked couscous
