- 1 package (16 ounces) frozen beef ravioli
- 1/2 cup dry bread crumbs
- 1/2 to 1 -1/2 teaspoons salt-free Italian herb seasoning
- 1/4 cup reduced-fat Italian salad dressing
- 1 can (14-1/2 ounces) diced tomatoes, undrained
- 1/2 medium green pepper, quartered
- 1/2 small red onion, quartered
- 1 tablespoon minced fresh oregano or 1 teaspoon dried oregano
- 1 tablespoon minced fresh basil or 1 teaspoon dried basil
- 1 garlic clove, minced
- 1 teaspoon balsamic vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon sugar
Mediterranean Dip with Garlic Pita Chips

- Pita Chips:
- 2 medium eggplants, peeled
- 1 large sweet red pepper
- 1 large sweet yellow pepper
- 1 large red onion
- 1/4 cup olive oil
- 1 tsp. salt
- 1/4 tsp. pepper
- 2 garlic cloves, minced
- 4 tsp. tomato paste
- 1/4 cup olive oil
- 2 Tbsp. grated Parmesan cheese
- 2 garlic cloves, minced
- 1 tsp. dried basil
- 1 tsp. dried thyme
- 1/2 tsp. salt
- 1/2 tsp. dried tarragon
- 1/4 tsp. coarsely ground pepper
- 1 package (12 ounces) whole pita breads
Chickpea Curry on Coconut Basmati Rice

For the curry: Soak chickpeas in water overnight
- FOR THE CURRY:
- 14 ounces, weight Dry Chickpeas (can sub in canned chickpeas)
- 1 whole Sweet Onion, Chopped
- 2 whole Large Tomatoes, Chopped
- 6 cloves Garlic Chopped
- 2 Tablespoons Extra Virgin Olive Oil
- 1 Tablespoon Curry Powder
- 1 teaspoon Salt
- 1 stick Cinnamon
- Lemon Wedges, To Decorate And Drizzle Juice On Top

- FOR THE COCONUT RICE:
- 2 cups Basmati Rice
- 3 cups Water
- 5 Tablespoons Canned Unsweetened Coconut Milk
- 1 teaspoon Salt
- 5 cloves Garlic Chopped

- 1 dash Chopped Cilantro, To Top
Crostini with Cannellini Beans, Arugula & Tomatoes

Mince one garlic clove. Combine it with the oil in a medium saucepan
- 2-3 cloves garlic, peeled
- 1 Tbsp. extra-virgin olive oil
- 2 cups cooked or canned cannellini beans, rinsed and drained
- 1/2 cup water
- Salt & freshly ground pepper to taste
- 12 1/2 -inch thick slices whole-wheat country bread
- 1 cup stemmed and chopped arugula or watercress
- 2 tomatoes, seeded and chopped (1 1/2 cups)
Mediterranean Halibut

If fish fillets are large, cut into 4 serving pieces
- 1 pound halibut, cod or red snapper fillets
- 2 Tbsp. lemon juice
- 1 Tbsp. chopped onion
- 1 Tbsp. chopped pimiento
- 1 Tbsp. coarsely chopped pimiento-stuffed olives
- 1 Tbsp. capers
- 1 Tbsp. olive or vegetable oil

- 4 cups water
- 8 tomatillos, husks removed and rinsed
- 1 medium ripe avocado, peeled and pitted
- 1 small onion, halved
- 1 jalapeno pepper, seeded
- 1/3 cup fresh cilantro leaves
- 1/2 tsp. salt

Breakfast Rice Pudding Recipe

My husband makes this rice pudding quite often for our breakfast
- 1-1/3 cups uncooked long grain or basmati rice
- 1 can (15-1/4 ounces) peach halves, drained
- 1 cup canned or frozen pitted tart cherries, drained
- 1 cup heavy whipping cream
- 1/2 cup packed brown sugar, divided
- 1/4 cup old-fashioned oats
- 1/4 cup flaked coconut
- 1/4 cup chopped pecans
- 1/4 cup butter, melted
Broiled Sirloin Steaks

In a small bowl, combine the first six ingredients, rub over both sides of steaks
- 2 Tbsp. lime juice
- 1 tsp. onion powder
- 1 tsp. garlic powder
- 1/4 tsp. ground mustard
- 1/4 tsp. dried oregano
- 1/4 tsp. dried thyme
- 4 boneless beef sirloin steaks (5 ounces each)
- 1 cup sliced fresh mushrooms
Spaghetti with Spicy Eggplant Sauce

Cook and drain spaghetti as directed on package
- 8 ounces uncooked regular or whole wheat spaghetti
- 1 small eggplant (1 pound), peeled and cubed (3 cups)
- 1 can (14 1/2 ounces) Italian-style stewed tomatoes, undrained
- 1 can (8 ounces) no-salt-added tomato sauce
- 1/2 tsp. crushed red pepper
- 2 Tbsp. chopped fresh parsley or 2 tsp. dried parsley flakes
