In a large kettle or Dutch oven, saute onion, green pepper and green onions in oil until tender, about 5 minutes
- 1 cup chopped onion
- 1 cup chopped green pepper
- 6 green onions, sliced
- 1/2 cup vegetable oil
- 1/2 cup all-purpose flour
- 3 cups water
- 1 can (14-1/2 ounces) Cajun-style stewed tomatoes
- 2 cups chopped peeled tomatoes
- 1 can (6 ounces) tomato paste
- 2 packages (16 ounces each) frozen whole kernel corn
- 3 cups cubed cooked ham
- 1-1/2 pounds fully cooked smoked sausage, sliced
- 1/8 tsp. cayenne pepper or to taste
- Salt to taste
- Hot pepper sauce to taste

This a very versatile casserole
- 4 cups 1/2-inch cubes hearty white bread or French bread
- 2 cups (about 6 ounces) shredded mild or sharp cheddar cheese
- 1/2 cup finely chopped onion
- 8 large eggs
- 3/4 cup half and half
- 2 tsp. Dijon mustard
- 1 tsp. salt
- 1/4 tsp. freshly ground black pepper
- 6 thick-cut bacon slices, cooked and crumbled
Super Veggie Vegan Enchiladas

1. Preheat the oven to 350 degrees F
- 1 package Flour Tortillas (12 Pieces)
- 1 cup Potatoes
- 1 cup Onions, Diced

Herbed Twice-Baked Potatoes

- 2 medium baking potatoes
- 1-1/2 ounces reduced-fat cream cheese, cubed
- 1 Tbsp. snipped chives
- 1/4 tsp. salt
- 1/4 tsp. dried basil
- Dash cayenne pepper
- 3 Tbsp. fat-free milk
- 3 tsp. butter, melted, divided
- Dash garlic powder
- Dash paprika

- 1/2 pound deveined peeled cooked medium shrimp, coarsely chopped
- 1/2 cup chopped celery
- 1/4 cup chopped onion

- 1 Tbsp. minced fresh parsley
- 2 tsp. Dijon mustard

- 4 skinless boneless chicken thighs (1 pound)

- 2 cups sliced mushrooms (6 ounces)
- 1 cup frozen carrots, onions and red peppers (from 16-ounce package)
- 1 can (14 1/2-ounces) whole tomatoes, undrained
- 1/4 cup fat-free sour cream
- 1/2 tsp. salt

Brown meat in a large deep skillet on medium-high heat; season with generously with salt and a little pepper
- 2 1/2 lbs 93% lean ground beef
- 1 cup minced onion
- 1 cup diced red bell peppers
- 3 cloves garlic, minced
- 1/4 cup minced cilantro
- 1 small tomato, diced
- 8 oz can tomato sauce
- 1/4 cup alcaparrado (manzanilla olives, pimientos, capers) or green olives
- 1 1/2 tsp ground cumin
- 1/4 tsp garlic powder
- 2 bay leaves
- kosher salt and fresh pepper, to taste

- 2 cups Granulated Sugar
- 3/4 cups Eggnog
- 1/2 cups Unsalted Butter
- 1 teaspoon Rum Flavoring
- 1 teaspoon Ground Nutmeg, Plus 1 Tablespoon For Garnish
- 1 cup Marshmallow Cream (fluff)
- 3 cups White Chocolate Morsels
- 2 packages (16 Oz. Size) Vanilla Candy Coating
