Makes roughly, using a 1.5 inch cookie cutter, 35-40 crackers Preheat oven to 400 degrees
- 1 cup of sharp cheddar cheese, shredded
- 4 tablespoons of butter, soft
- 3/4 cup of potato starch (Not potato flour)
- 1/4 teaspoon salt
- 1/4 teaspoon flax meal
- 1/2 teaspoon baking powder
- 2 tablespoons of milk
Chunky Chicken Soup

In a 3-qt saucepan, cook chicken, celery and onion in oil, until chicken juices run clear
- 3 boneless skinless chicken thighs, cut into 1-inch pieces
- 1 cup sliced celery
- 1/2 cup chopped onion
- 2 Tbsp. vegetable oil
- 6 cups chicken broth
- 1 1/2 cups sliced carrots
- 1 tsp. dried thyme
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/2 cup uncooked macaroni

- Two 14-ounce cans artichoke bottoms, rinsed, drained, patted dry
- 1-1/2 cups grated Parmesan cheese

- 1/2 cup brown sugar

- 1 cup brown rice flour

In a Dutch oven or soup kettle, bring the tomatoes, soup and water to a boil
- 2 cans (14-1/2 ounces each) diced tomatoes, undrained
- 2 cans (10-3/4 ounces each) condensed tomato soup, undiluted
- 3-1/2 cups water
- 1 package (3-1/2 ounces) sliced pepperoni, quartered
- 1 medium sweet red pepper, chopped
- 1 medium green pepper, chopped
- 1 cup sliced fresh mushrooms
- 2 garlic cloves, minced
- 1/2 tsp. rubbed sage
- 1/2 tsp. dried basil
- 1/2 tsp. dried oregano
- Salt and pepper to taste
