Chicken baked with Red Onions, Potatoes and Rosemary

Preheat the oven to 400 degrees F
- 2 red onions, each cut into 10 wedges
- 1 1/4 lbs. new potatoes, not peeled
- 2 bulbs garlic, separated into cloves, but not peeled
- salt and pepper
- 1/2 cup extra virgin olive oil
- 2 Tbsp. balsamic vinegar
- 5 about 5 sprigs rosemary
- 1 (4-lb) roasting chicken, cut into 8 pieces, or 8 chicken thighs, rubbed with sea salt to crisp the skin
Creamy Black Bean Salsa

In a large bowl, combine the beans, corn, peppers, onion and parsley (or cilantro)
- 1 can (15 ounces) black beans, rinsed and drained
- 1-1/2 cups frozen corn, thawed
- 1 cup finely chopped sweet red pepper
- 3/4 cup finely chopped green pepper
- 1/2 cup finely chopped red onion
- 1 Tbsp. minced fresh parsley (or cilantro)
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 2 Tbsp. red wine vinegar
- 1 tsp. ground cumin
- 1 tsp. chili powder
- 1/2 tsp. salt
- 1/4 tsp. garlic powder
- 1/8 tsp. pepper
- Tortilla chips
Fish Soft Tacos with Black Beans

Heat the oil in a large skillet over medium-high heat
- 1 Tbsp. vegetable oil
- 1 green bell pepper, seeded and sliced into thin strips
- 1 cup sliced onion
- 1 15-ounce can black beans, rinsed and drained
- 1/2 cup sour cream
- 1/2 tsp. ground cumin
- 4 cooked tilapia fillets, broken up into bite-size pieces (or 4 cups cooked seafood pieces such as cod, flounder, halibut, and shrimp)
- 8 6-inch flour tortillas, warmed in the microwave if desired
- Shredded Cheddar cheese, for serving
- Diced tomato, for serving
- Shredded lettuce for serving

- 3 red Spanish onions, thinly sliced
- 4 cloves garlic, thinly sliced
- 2 tsp. brown sugar
- 1 tsp. dried thyme
- Salt and ground pepper to taste
- 1 cup dry red wine (8 oz)
- 3 cups chicken stock (24 oz)
- 1/4 cup herb-flavored soft goat cheese
- 8 slices baguette, each about 1/2 inch thick, toasted

- 1 large clove garlic minced
- 8 ounces extra-lean ground beef (or ground turkey)
- 2 cups frozen corn kernels, rinsed with hot water and drained
- 1 cup defatted reduced-sodium beef broth
- 1/2 cup salsa
- 2-4 Tbsp. canned chopped mild green chili peppers
- 1 cup uncooked quick-cooking rice
- 1 cup canned pinto beans, rinsed and drained
- 1 1/4 tsp. chili powder
- 1/2 tsp. dried thyme leaves

Roasted Eggplant and Onion Dip
