Fruity Neapolitan Tomato Sauce "Pomarola"

- 2 1/2 cups canned, peeled plum tomatoes in juice, or 1 1/2 pounds fresh, sweet, mature vine-ripened plum tomatoes, peeled, seeded, and chopped
- 4 Tbsp. extra-virgin olive oil
- 2 large garlic cloves, crushed
- 1 small red onion, minced
- 1 medium celery stalk, including leaves, minced
- 1 small carrot, minced
- 2 Tbsp. fresh flat-leaf parsley, minced
- Small handful of chopped fresh basil
- 2 Tbsp. tomato paste
- scant 1/2 tsp. salt, or to taste
- Freshly ground black or white pepper
Skillet Lasagne

Bring a pot of salted water to a boil
- 14 ounces flat pasta, such as farfalle
- 3/4 pound Italian sausage (sweet or hot), casings removed
- 1 onion, finely chopped
- 1 green bell pepper, finely chopped
- 1 medium-sized zucchini, diced
- 4 garlic cloves, minced
- 1 can (28 ounces) unseasoned tomato sauce
- 4 tsp. dried oregano
- 1 tsp. dried basil
- 1/2 tsp. dried thyme
- Salt and freshly ground black pepper
- 1 cup ricotta cheese
- 2 ounces mozzarella, grated (1/2 cup)
- 1/4 cup freshly grated Parmesan
- 1/4 cup chopped fresh parsley
- 1 egg, lightly beaten
Chicken Corn Chowder

Heat 1/2 stick of the butter in a skillet over medium-high heat
- 1/2 plus 1 sticks butter
- 2 small onions, diced
- 3 to 4 celery ribs, diced
- 8 cups chicken broth
- 2 cups diced cooked chicken
- 1 (10-ounce) package frozen corn, thawed
- 3 cups cubed potatoes
- 2 cups half-and-half
- 1/2 cup all-purpose flour
- 1 hard-cooked egg, chopped
Southwest Black Bean Soup

In a large nonstick saucepan, saute the pepper, celery and onion in oil until tender
- 1 medium sweet red pepper, chopped
- 2 celery ribs, chopped
- 1 small onion, chopped
- 1 Tbsp. canola oil
- 2 cans (15 ounces each) black beans, rinsed and drained
- 1 can (14-1/2 ounces) reduced-sodium chicken broth
- 1 can (14-1/2 ounces) diced tomatoes, undrained
- 1 can (4 ounces) chopped green chilies
- 3/4 tsp. ground cumin
- 1-1/2 cups cooked instant brown rice
- 6 Tbsp. reduced-fat sour cream
Cold Szechuan Noodles

Bring a large pot of water to a boil over high heat
- 1/2 cup chicken stock
- 1/2 cup smooth peanut butter
- 1/4 cup soy sauce, plus more if necessary
- 1/4 cup rice vinegar
- 2 Tbsp. Chinese black vinegar or Worcestershire sauce
- 3 Tbsp. toasted Asian sesame oil
- 2 Tbsp. chili garlic sauce, plus more if necessary
- 1 1/2 Tbsp. sugar
- 4 garlic cloves, minced
- 1 pound Chinese #3 wheat noodles, linguine, or whole-wheat linguine
- 1 red pepper, seeded and cut into matchsticks
- 1 carrot, peeled and cut into matchsticks
- 1 bunch green onions, thinly sliced
- 1/2 cup peanuts, chopped
- 2 cups bean sprouts

- 1 chicken (about 3 1/2 pounds)
- 4 sprigs fresh rosemary
- 4 small cloves garlic, lightly crushed
- Salt and freshly ground black pepper, to taste
- 1 cup chicken broth
- 2 Tbsp. fresh lemon juice
- 2 Tbsp. unsalted butter
Oven Fish 'n' Chips

In a medium bowl, combine oil and pepper
- Fish:
- 2 Tbsp. olive oil
- 1/4 tsp. pepper
- 4 medium baking potatoes (1 pound), peeled
- 1/3 cup all-purpose flour
- 1/4 tsp. pepper
- 1 egg, lightly beaten
- 2 Tbsp. water
- 2/3 cup crushed cornflakes
- 1 Tbsp. grated Parmesan cheese
- 1/8 tsp. cayenne pepper
- 1 pound Haddock fillets
- Tartar sauce, optional
Mustard-Balsamic Vinaigrette

Combine all ingredients in a jar with a tight-fitting lid and shake well
- 1/2 cup balsamic vinegar
- 1/4 cup extra-virgin olive oil
- 1/4 cup canola oil
- 2 Tbsp. coarse mustard
- 1 Tbsp. pure maple syrup or 1 1/2 tsp. brown sugar
- 1 tsp. dried basil
- Salt & freshly ground pepper to taste
