Asparagus 'n' Vinaigrette

- 2 pounds fresh asparagus, trimmed and cut into 2-inch pieces
- 2 green onions, thinly sliced
- 2 Tbsp. olive oil
- 2 Tbsp. red wine vinegar
- 1/2 tsp. reduced-sodium teriyaki sauce
- 1/2 tsp. sugar
- 1/2 tsp. salt
- 1/8 tsp. pepper
Pollo al Chilindron (Chicken with Peppers)

Heat 2 Tbsp. of the olive oil in a Dutch oven over medium-high heat
- 3 Tbsp. olive oil
- 9 boneless, skinless chicken thighs, cut in half
- 3/4 tsp. salt
- 3/4 tsp. freshly ground pepper
- 1 large onion, chopped (about 1 1/2 cups)
- 1 large garlic clove, chopped (about 1 1/2 tsp.)
- 3 red bell peppers, cut in 2 x 1/4-inch strips
- 1 red jalapeno, chopped (seeded and membranes removed, if desired)
- 2 ounces thinly sliced serrano ham or prosciutto, cut in 1/2-inch pieces (about 1/2 cup)
- One 14 1/2-ounce can diced tomatoes in juice
Hearty Jambalaya

If you can't find andouille sausage, hot links, smoked sausage or chorizo will also work
- 1 can (28 ounces) diced tomatoes, undrained
- 1 pound fully cooked andouille sausage links, cubed
- 1/2 pound boneless skinless chicken breasts, cut into 1-inch cubes
- 1 can (8 ounces) tomato sauce
- 1 cup diced onion
- 1 small sweet red pepper, diced
- 1 small green pepper, diced
- 1 cup chicken broth
- 1 celery rib with leaves, chopped
- 2 Tbsp. tomato paste
- 2 tsp. dried oregano
- 2 tsp. Cajun seasoning
- 1-1/2 tsp. minced garlic
- 2 bay leaves
- 1 tsp. Louisiana-style hot sauce
- 1/2 tsp. dried thyme
- 1 pound cooked medium shrimp, peeled and deveined

White Bean Spread with Roasted Garlic

Preheat oven to 400°F. Peel most of the papery skin off of the head of garlic
- 1 * 1 head Garlic
- 1 * 1-¼ teaspoon Olive Oil, Divided
- 1 * 1 can (15.8 Oz. Can) Northern Beans (or Cannellini)
- * ¼ cups Fresh Cilantro Leaves, Loosely Packed
- * ¼ teaspoons Salt
