MAPLE MUSTARD-GLAZED PEAMEAL BACON BARBECUE ROAST

. Bring the maple syrup, mustard, vinegar, thyme and pepper to a boil; simmer 2 minutes
- 1/2 cup (125 mL) medium maple syrup
- 1/4 cup (60 mL) Dijon mustard
- 2 tsp (10 mL) cider vinegar
- 2 tsp (10 mL) minced fresh thyme
- 1/4 tsp (1 mL) freshly ground pepper
- 2 lbs (1 kg) peameal bacon roast
Cauliflower Pizza Crust

Preheat your oven to 400F
- 4 cups raw cauliflower rice
- 1 egg, beaten
- 1/3 cup soft goat cheese ( you can use low fat mozzarella cheese or parmesan if you prefer - some versions of this recipe use up to 1 cup of cheese so you be the judge)
- 1 teaspoon dried oregano ( or Pizza spices of your choice; garlic, crushed red pepper, oregano.)

- For the chicken skewers:
- 1 pound Organic boneless skinless chicken breast, cut into 1 inch chunks
- 2 tablespoons of lemon juice (organic preferred)
- 3 tablespoons of organic olive oil
- 1 teaspoon dried oregano
- 1 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 2 garlic cloves, minced
- For the yogurt sauce:
- 1 cup of plain organic greek yogurt
- 1/2 cup of organic sour cream (or an additional 1/2 cup of greek yogurt if you prefer)
- salt and pepper to taste
- 1/2 cup minced cucumber (I prefer the small organic persian cucumbers)
- 1/4 cup minced fresh organic parsley or dill
- For the tomato cucumber relish:
- 1/4 cup minced cucumber (organic cucumber if possible)
- 1/4 cup minced seeded organic tomato
- 2 teaspoons lemon juice (organic preferred)
- 1 tablespoon organic olive oil
- 2 tablespoons minced organic parsley
- salt and pepper to taste
Pumpkin Pie Cupcakes

- 2/3 cup all purpose flour
- 15 oz pumpkin puree
- 3/4 cup sugar
- 2 large eggs
- 1 teaspoon vanilla
- 3/4 cup evaporated milk
- 2 teaspoons pumpkin pie spice
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- Whipped cream
1-MINUTE BERRY PEANUT BUTTER SMOOTHIE

Vegan Quinoa Chili

- 1 medium yellow or white onion, diced ( + coconut or olive oil)
- 3 small or 2 large sweet potatoes, diced (about 1 pound)
- 1 teaspoon sea salt + more to taste
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 3 tablespoons chili powder
- 3 teaspoons cumin
- 4 cups vegetable broth, low sodium, divided
- 1 cup quinoa, uncooked (you will not need to rinse if using Bob's Red Mill quinoa)
- 1 (15-ounce) can kidney beans, drained and rinsed
- 1 (15-ounce) can black beans, drained and rinsed
- 1 1/2 cups corn kernels, frozen, canned or roasted
- 1 cinnamon stick
FAJITA CHICKEN

- Parchment paper or aluminium foil, 12×18 inches
- 1 chicken breast
- 1/2 red pepper, sliced
- 1/2 yellow pepper sliced
- 1/4 red onion, sliced
- 3 tablespoons salsa
- 1 tablespoon Mexican cheese blend
- 1 tablespoon olive oil
- Salt, to taste

This Garlic Spaghetti Squash with Herbs includes a handful of toasted pine nuts and grated Gruyere cheese
- 1 medium spaghetti squash, halved and seeded
- olive oil
- kosher salt
- 2 cloves garlic, minced
- 2 teaspoons white wine vinegar
- 1/4 cup minced fresh parsley
- 2 tablespoons minced fresh basil (sage is also yummy)
- 3/4 cup shredded Gruyère cheese
- 1/2 cup pine nuts, toasted

Eggs Benedict Cups

- 6 slices of Ham (Canadian-style Bacon)
- 6 eggs
- 3 egg yolks
- 1/2 tsp white vinegar
- 1/2 cup melted butter
- 4 Tbsp. lemon juice
- A pinch of salt
- A pinch of black pepper
- 3 English muffins (6 halves)
Buffalo Thighs
