This quinoa salad with sesame soy dressing is bursting with healthy flavor and goodness
- For the Salad:
- − 3 cups Quinoa (cooked)
- − 1/2 Head Romaine Lettuce (shredded)
- − 2 Small Cucumbers (sliced)
- − 16 Green Olives (pitted, and sliced in half)
- − 16 Cherry Tomatoes (sliced in half)
- − 1 Yellow Bell Pepper (sliced)
- − 2 Avocados (peeled and sliced)
- − 1 Fresh Lime
- − Handful Chives (chopped)
- For the Sesame Soy Dressing:
- − 1 Tbsp Sesame Oil
- − 2 Tbsp Soy Sauce (check for gluten-
- free friendliness or use Tamari if you’re
- gluten-free)
- − 2 Tbsp Date Honey or Maple Syrup
- − 1 Clove Garlic (crushed)
Portobello Mushroom Pizza

- 4 portobello mushrooms
- 80 g/1 cup of cheese
- 4 handfuls of spinach
- 12 tbsp marinara
- 4 garlic cloves, crushed
- 4 tbsp fresh basil, chopped
Crunchy Zucchini Fritters with Avocado Dill Dip

Using the large holes of a box grater, grate zucchini
- Avocado Onion Dip:
- 1 large zucchini or 2 small
- 1 clove of garlic peeled and minced
- 1/4 Cup fresh basil; we grown our own, but you can find it at any grocery store
- 1/4 cup fresh oregano. Ditto
- 1 tablespoon lemon zest
- 2 organic eggs or ‘Flax Egg’
- 1/4 cup gluten free flour
- 1/4 teaspoon Onion powder or to taste
- 1 teaspoon salt or to taste
- 1/4 teaspoon of pepper or to taste
- Dip Ingredients
- Avocado dip base (below)
- 1/2 cup finely chopped dill
- 1 ripe avocado, we prefer Hass avocados - they are tastier
- 1/2 teaspoon of onion powder or to taste
- 1/2 teaspoon of Vegenaise, available at most health food stores
- Salt to taste
- Instructions
- Cut avocado in half, remove seed. Scoop meat with a spoon and place bowl. Add all other ingredients. Mash until smooth.
- Notes
- Serve with carrots sticks, celery, jicama, sweet peppers, millet crackers, etc. Scoop and enjoy!
Holy Water

- 1 oz vodka
- 1 oz rum
- 1/2 oz blue curaçao
- 1/2 peach schnapps
- 4 oz lemondade

In a food processor or electric mixer combine cream cheese, feta cheese, yogurt, garlic, and pepper until smooth
- 1 pkg. Cream cheese, softened
- 1/2 cup feta cheese, crumbled
- 2 tbsp plain yogurt
- 1 clove garlic, minced
- 1/4 tsp black pepper
- 1 tomato seeded & diced
- 1/2 medium English cucumber, diced
- 2 green onion, finely chopped
- black olives for garnish

- 2 sticks (1 cup) salted butter, room temperature
- 1/2 cup sugar
- 1 tsp vanilla
- 1.5 cups flour
- 1 cup potato chips, finely crushed
- 25 caramel candies
- 1/4 cup heavy cream
- Coarse sea salt
