Sweet Potato Fries

Preheat the oven to 450 degrees F
- Sweet potatoes.(A good estimate being one per person).
- Corn starch. A big sprinkle’s worth. (optional but said to help make the fries crispy)
- Olive oil. A couple of tablespoons or so.
- Salt, pepper and spices. Amy suggested cumin, but I much prefer cayenne pepper, paprika or curry powder. Garlic is great as well. It’s up to you!
Crispy Smashed Potatoes

Here is a really fun and different way to serve potatoes
- 2 pounds small red potatoes (1 1/2 – 2″ diameter)
- 6 tablespoons extra virgin olive oil (more if needed)
- 1 teaspoon thyme leaves
- fresh ground salt and pepper to taste
Honey-Brushed Chicken

Combine garlic powder, chili powder, salt, cumin, paprika, and cayenne pepper in a medium bowl
- 2 teaspoons garlic powder
- 2 teaspoons chili powder
- 1 teaspoon salt
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 8 boneless, skinless chicken thighs (or 4 chicken breasts)
- 6 tablespoons honey
- 2 teaspoons cider vinegar
Asian Sesame Noodles

Cook noodles as per directions on package
- 1/2 lb Asian egg noodles
- 1/4 c Vegetable or peanut oil
- 2 tbsp Soy sauce
- 1 tsp Sesame oil
- 2 Cloves garlic; crushed
- 1 tsp Red pepper
- 1/3 c Toasted sesame seeds
SLOW COOKER HAM AND SWEET POTATOES

dd the ham first into the slow cooker
- Slow Cooker Size:
- 3-4 lb. Black Forest ham half
- 2 lbs. peeled and cut sweet potatoes (I cut mine 1/2 inch thick)
- 1 (20-oz.) can sliced pineapple, (the juices from the can get added to the slow cooker too)
- 1/2 tsp. ground cinnamon
- 1/2 cup brown sugar
- 6-quart or larger
Chicken Fajita Soup

Spray your slow cooker with cooking spray
- Toppings:
- 1 pound boneless, skinless chicken breasts
- 2 10.75oz cans condensed cream of chicken soup
- 1 cup salsa
- 2 cups frozen corn
- 1 15oz can black beans, drained and rinsed
- 1 1/2 cups water
- 1 teaspoon ground cumin
- 1/2 teaspoon dried cilantro
- 1 cup shredded cheddar cheese

French toast with sugared strawberries

Whisk 1 egg with 2 tbsp skimmed milk and dip 2 slices wholemeal bread
- 1 egg
- 2 tbsp skimmed milk
- 2 slices wholemeal bread

- 1/2 tsp icing sugar

Mac ‘n’ Cheese - One-Pan

. Combine 2 cups of milk, macaroni, salt, and pepper in a large skillet over medium-high heat
- 3 cups whole milk, divided
- 2 cups uncooked elbow macaroni
- 1/2 Tbsp. salt
- 1/2 Tbsp. pepper
- 3/4 cup shredded cheddar cheese
- 3/4 cup shredded mozzarella cheese
- 1 cup seasoned panko bread crumbs

Steak Tortillas

A great recipe to use if you have some left over steak!
- 2 cups thinly sliced cooked beef ribeye or sirloin steak (about 3/4 pound)
- 1 small onion, chopped
- 1/4 cup salsa
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/4 teaspoon garlic powder
- 1-1/2 teaspoons all-purpose flour
- 1/2 cup cold water
- 6 flour tortillas (8 inches), warmed
- Shredded cheese, chopped lettuce and tomatoes and additional salsa, optional
MOROCCAN COUSCOUS POWER BOWL

Combine couscous, chickpeas, vegetables, raisins and almonds in a large bowl
- 2 cups (500 ml) cooked couscous
- 3/4 cup (175 ml) canned chickpeas, drained and rinsed
- 3/4 cup (175 ml) finely chopped kale
- 1/2 cup (125 ml) shredded carrot
- 1/4 cup (60 ml) sultana raisins
- 2 tbsp (30 ml) sliced almonds
