- 3 Tbsp mayo
- 1 cup red wine vinegar
- 1 head red leaf lettuce, rinsed and torn

- 6 tablespoons olive oil
- 2 tablespoons white wine vinegar
- 2 tablespoons chopped fresh parsley
- 2 cloves garlic, chopped
- 1 teaspoon dried basil
- 1/4 teaspoon red pepper flakes
- 1 pinch dried oregano
- 1 pound sliced ham
- 1 pound thinly sliced Genoa salami

Bronx Crumb Cake

Supposedly this recipe is from German Bakery in the Bronx in the 1950's
- For cake:
- 1 (1/4-ounces) package active dry yeast (2 1/2 teaspoons)
- 1 cup warm whole milk (105115°F)
- 1/2 cup plus 1 tablespoon sugar
- 1 tablespoon fresh lemon juice
- 3 3/4 cups plus 2 tablespoons all-purpose flour
- 1 1/2 teaspoons salt
- 2 large eggs, at room temperature for 30 minutes
- 1 1/2 teaspoons vanilla
- 1 1/2 sticks (3/4 cup) unsalted butter, cut into tablespoon pieces and softened slightly
- For crumb topping:
- 3 cups all-purpose flour
- 1 1/2 cup sugar
- 3 teaspoons cinnamon
- 3 sticks cold unsalted butter, cut into small pieces
- 2 teaspoon vanilla
Watermelon Margarita (Cooking Light)

- 2 teaspoons sugar
- 1 lime wedge
- 3 1/2 cups cubed seeded watermelon
- 1/2 cup tequila
- 2 tablespoons sugar
- 3 tablespoons fresh lime juice
- 1 tablespoon Triple Sec (orange-flavored liqueur)
- Lime wedges or watermelon balls (optional)
Mushroom-Stuffed Chicken (Cooking Light)

1. Preheat oven to 350°. 2
- 2 (1-ounce) slices white bread, torn
- Cooking spray
- 1/4 cup chopped green onions
- 8 ounces presliced mushrooms
- 1/2 teaspoon dried thyme
- 1 garlic clove, minced
- 1/2 cup (2 ounces) shredded part-skim mozzarella cheese
- 3/4 teaspoon salt, divided
- 1/2 teaspoon black pepper, divided
- 4 (6-ounce) skinless, boneless chicken breast halves
- 1/4 cup all-purpose flour
- 2 large eggs, lightly beaten
- 1 tablespoon olive oil
OXO Beef Gravy

1 In a saucepan over medium-high heat melt butter or margarine until bubbly (do not brown)
- 1/2 cup butter or 1/2 cup margarine
- 1/2 teaspoon black pepper (or to taste)
- 1/8 teaspoon garlic powder (optional or to taste)
- 1/2 cup flour, plus
- 2 tablespoons flour (for a very thick gravy increase to 3 tablespoons)
- 1 tablespoon oxo beef bouillon powder (or to taste, I use 2 small package OXO beef bouillon powder)
- 4 cups canned low sodium beef broth (or use beef pan drippings with broth to make up 4 cups, omit the bouillon if using beef drippings)
Spaghetti with Checca Sauce (Giada)

Cook pasta according to package directions in well-salted water
- 8 oz. angel hair pasta
- 4 green onions, chopped
- 3 cloves garlic, minced
- 12 oz. cherry tomatoes, halved
- 1 oz. freshly grated parmesan cheese
- 10 fresh basil leaves
- 3 tablespoons extra virgin olive oil
- 4 oz. fresh mozzarella cheese, cut into 1/2 inch cubes
- Reserved pasta cooking liquid
Italian Butter (Carraba's)

- 1/8 tsp oregano
- 1/8 tsp basil
- 1/8 tsp rosemary
- 1/8 tsp kosher salt
- fresh ground pepper
- dash red pepper flakes
- 1 garlic clove, crushed
- 6 tbsp extra virgin olive oil
Easy Herb Vinaigrette (Cooking Light)

Combine the first 3 ingredients in a medium bowl; slowly whisk in oil until combined
- 9 tablespoons white wine vinegar
- 1 1/2 tablespoons wildflower honey
- 1/2 teaspoon fine sea salt
- 1 cup canola oil
- 3 tablespoons chopped fresh basil
- 3 tablespoons minced fresh chives
Irish Soda Bread Muffins

Preheat oven to 400F. If using silicone liners, drop into a muffin tin
- 1-1/2 cups all-purpose flour, fluffed to aerate before measuring
- 3/4 cup 100% White Whole Wheat Flour, preferably King Arthur, fluffed
- 1/3 cup sugar
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon table salt
- 2 teaspoons ground caraway (enough for subtle caraway flavor)
- 1-1/2 cups dried fruit (currants, cranberries, apricots, golden raisins), larger pieces cut small
- 6 tablespoons butter
- 1 egg
- 1 cup buttermilk (see TIPS)
- Demerera sugar for topping (see TIPS)
