- 1 Tbsp. unsalted butter

- 1 tsp. vanilla
- 1 cup chopped nuts
PUMPKIN BUTTER

This Pumpkin Butter is an excellent hostess present, and a wonderful spread for toast and muffins
- 1 (29 oz. can) Pumpkin Puree
- 3/4 cup apple juice
- 2 tsp. ground ginger
- 1/2 tsp. ground cloves
- 1 1/2 cups white sugar
- 2 tsp. ground cinnamon
- 1 tsp. ground nutmeg
RASPBERRY FREEZER JAM

You can use this for Blackberry, Blueberry, or Raspberry
- 3 cups crushed berries (about 2 1/4 lbs or 6ea 6 oz. containers)
- 2 tbsp. lemon juice (use only with blueberry)

STUFFED COUNTRY STYLE CABBAGE ROLLS

Country Cabbage Rolls Straight From A Mennonite Kitchen
- 1 large savoy cabbage
- 2 pounds lean ground beef
- 2 medium to large onions
- 2 tablespoons canola or Bertolli olive oil .. or even butter is fine
- 1 cup white or brown rice. . . and 2 cups water
- 3 Eggland’s Best eggs
- 1 1/2 teaspoons Morton salt
- 1 teaspoon pepper
- 2 cans tomato soup
- 2 small bottles (individual serving sizes) tomato juice or vegetable cocktail . .like V8
- 1 can or small carton chicken broth
STUFFED MUSHROOMS

Wipe off or wash mushrooms in cold water
- 24 oz. white button mushrooms
- 1/2 lb. hot pork sausage
- 1/2 medium onion, finely diced
- 4 cloves garlic, finely minced
- 8 oz. cream cheese
- 1 whole egg yolk
- 3/4 cup Parmesan cheese, grated
- 1/2 cup dry white wine
- Salt and Pepper to taste
Breakfast Bake

11×17 pan, sprayed with cooking spray (Note: I think a 9×13 works better, but might need to bake a little longer)...
- 5 eggs
- 1/4 cup milk
- 16 oz refrigerated breakfast biscuits (I used the Pillsbury flakey kind) ** DO NOT PRE-BAKE
- 4 scallions (green onions, spring onions, whatever you prefer to call them)
- 1 cup shredded extra sharp cheddar cheese
- If you’re into the meats – cooked center cut bacon or cooked sausage

Method: Preheat the oven to 350deg
- Ingredients:
- Chocolate chip pecan cookies... with bacon grease
- 1/2 cup bacon grease
- 1/2 cup butter, room temperature
- 1 1/2 cup brown sugar
- 1 large egg
- 1/4 cup buttermilk
- 1 tsp. vanilla extract
- 3 cups all-purpose flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. cinnamon
- 1/2 tsp. salt
- 1/4 tsp. cayenne
- 1 cup roasted chopped pecans
- 2 cups chocolate chips

- 2 1/2 cups all-purpose flour
- 1/4 cup unsweetened cocoa powder, such as Pernigotti
- 1 teaspoon baking powder

- 1 cup buttermilk, shaken
- 1 tablespoon liquid red food coloring
- 1 teaspoon white vinegar
- 1 teaspoon pure vanilla extract
- 1/4 pound (1 stick) unsalted butter, at room temperature
- 1 1/2 cups sugar
- 2 extra-large eggs, at room temperature

- 8 ounces cream cheese, at room temperature
- 12 tablespoons (1 1/2 sticks) unsalted butter, at room temperature

- 2 extra-large eggs, at room temperature
- 1 cup sour cream, at room temperature

- 2 cups all-purpose flour

- 1 teaspoon baking powder
- 1/2 teaspoon kosher salt
- 1 teaspoon ground cinnamon
- 3 large, ripe peaches, peeled, pitted, and sliced
- 1/2 cup chopped pecans
