BACARDI RUM CAKE

- Cake:
- 1 cup chopped pecans or walnuts
- 1 (18 1/2 oz.) pkg. yellow cake mix
- 1 (3 3/4 oz.) pkg. Jello Vanilla instant pudding and pie filling
- 4 eggs
- 1/2 cup cold water
- 1/2 cup Wesson oil
- 1/2 cup Bacardi dark rum (80 proof)
- * If using yellow cake mix with pudding, use 3 eggs instead of 4
- and 1/3 cup oil instead of 1/2 cup
- Glaze:
- 1/4 lb. butter
- 1/4 cup water
- 1 cup granulated sugar
- 1/2 cup Bacardi dark rum (80 proof)
Fudge Pudding

Spread in a well greased baking pan 8 X 8 X 2 inch
- 1 cup flour
- 2 tsp. baking powder
- 1/4 tdp. salt
- 3/4 cup sugar
- 1 1/2 tbsp. cocoa
- Soften above and stir together
- Add 1/2 cup milk
- 2 tbsp. melted shortening
- 1 cup chopped nuts
- Mix well

- 3/4 cup eggnog
- 2 tsp. vanilla
- 3/4 cup unsalted butter
- 1 cup sugar
- 2 large eggs
Penne Pasta with Tuna and Fresh Tomato Sauce

Toss together a dinner that's loaded with omega-3s (thanks to the tune) and full of good hunger-bursting carbs
- Prep time: 10 minutes
- Cook: 20 minutes
- Makes: 4 servings
- 12 oz. whole-wheat penne pasta
- 1 TBSP extra-virgin olive oil
- 5 garlic cloves, minced
- 2 lbs. ripe tomatoes, chopped (about 4 cups)
- 3/4 tsp. kosher salt
- 1/2 tsp.crushed red pepper, or to taste
- 3 TBSP chopped fresh sage
- 1 (7 oz.) can of all-white chunk tuna packed in water and drained
- 1 medium zucchini, sliced lengthwise very thin with vegetable peeler
- 2 TBSP freshly grated Parmesan cheese

- 11 oz. milk chocolate, divided
- 2 sticks sweet butter
- 1 c. sugar
- 3 tbsp. cold water
Sigrid's Carrot Cake

For the cake: Preheat the oven to 350 degrees F
- 2 cups granulated sugar
- 1 cup vegetable oil
- 4 whole eggs
- 2 cups all-purpose flour, plus more for dusting
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 2 cups grated carrots
- Butter, for greasing
- 1 stick butter, softened
- 1 package (8 ounces) cream cheese, softened
- 1 pound powdered sugar
- 2 teaspoons vanilla extract
- 1 cup pecans, chopped finely
Cheese Spaghetti

This was a big favorite with my kids and was enjoyed by the whole family
- Velveeta Cheese cut into 1/2 to 3/4 inch cubes, enough to fill a 1 qt. sauce pan 1/2 full.
- 1 can of Campbell's tomato soup
- 1 lb. spaghetti noodles
OVEN BAKED STEW

- 2 lbs. Stew meat
- 1 bunch of carrots
- 3 or 4 stocks of celery
- 4 or 5 potato’s
- 3 small onions
- 46 oz. tomato juice or V8 juice
- 3 tbsp. soy sauce
- 3 tbsp. tapioca
Kung Pao Chicken

Combine chicken and cornstarch in a small bowl and toss to coat
- 1 lb boneless-skinless chicken breasts (cut into 1” pieces)
- 1 tablespoon cornstarch
- 2 teaspoons sesame oil
- 3 tablespoons green onions (chopped)
- 3 garlic cloves (minced)
- 1/2 teaspoon crushed red pepper flakes
- 1/2 teaspoon powdered ginger
- 2 tablespoons rice wine vinegar
- 2 tablespoons soy sauce
- 2 teaspoons sugar
- 1/3 cup dry roasted peanuts (if desired)
SUNSHINE DESERT

Cook for 3 minutes then dissolve 1 regular pkg
- Boil together in a saucepan the following ingredients:
- 1 regular pkg. lemon jello
- 1 can crushed pineapple
- 2 slightly beaten egg whites
- 1 pint “whipped” whipping cream (un-sugared)
- 1 angel food cake.
- 2 cups milk
- 1 cup sugar
- 2 egg yokes lightly beaten
