Chicken/Asparagus Roll-Ups

Season pounded chicken breasts lightly with salt and pepper
- 4 whole chicken breasts, split, skinned, boned and pounded thin
- salt and pepper to taste
- 1 lb. fresh asparagus
- 2 T. flour
- 1 garlic clove, minced
- 1 t. salt, divided
- 1/2 t. leaf thyme, divided
- 1/4 t. paprika
- 2 cups white onion, slived 1/4" thick
- 3 large tomatoes, sliced 1/2" thick
- 1/2 cup chicken broth
Sausage and Lentil Soup

Coat large pot with cooking spray; heat over medium-high heat
- 8 oz. kielbasa sausage, diagonally cut into 1/4" thick slices
- 1 onion, chopped (about 1 cup)
- 2 carrots, diagonally sliced
- 2 ribs celery, chopped
- 2 cans (19 oz. ea.) lentil soup
- 1 can (14.5 oz.) diced tomatoes with basil, garlic and oregano

- 5 T. butter
- 1 3/4 cups flour
- 1/2 cup sugar
- 1 t. baking soda
- 1/2 cup light brown sugar, firmly packed
- 1/2 t. salt
- 1 large egg
- 1/4 t. baking powder
- 2 egg whites
- 1/2 cup heavy cream
- 1 t. vanilla extract
- 1/3 cup chopped walnuts
- 1 1/2 cups mashed, ripe bananas

- 3 T. unsweetened pineapple juice
- 3 T. red wine vinegar
