Hearty Beef Soup

In two Dutch ovens or one large soup kettle, brown beef and onions in butter in batches; drain
- 4 lbs. boneless beef tip sirloin steak, cut into 1/2" cubes
- 4 cups chopped onions
- 1/4 cup butter
- 4 qts. hot water
- 4 cups sliced carrots
- 4 cups cubed, peeled potatoes
- 2 cups chopped cabbage
- 1 cup chopped celery
- 1 lg. green pepper, chopped
- 8 t. beef bouillon granules
- 1 T. seasoned salt
- 1 t. dried basil
- 1 t. pepper
- 4 bay leaves
- 6 cups tomato juice
Mini Meatloaves

Heat oven to 375 degrees. Mix meat, stuffing mix, water and optional dry ingredient
- Option 1:
- 1 pound ground beef
- 1 (6 oz.) pkg. Stove Top stuffing mix
- 1 cup water
- 3/4 cup shredded cheese
- 1 t. garlic powder
- 3/4 cup barbecue sauce
- Option 2:
- 1 t. Italian seasoning
- 3/4 cup spaghetti sauce
- Option 3:
- 2 t. chili powder
- 3/4 cup salsa
Crescent Pesto Pinwheels

Heat oven to 350 degrees. Unroll dough into 2 long rectangles
- 1 (8 oz.) can refrigerated crescent dinner rolls
- 1/3 cup pesto
- 1/4 cup chopped roasted red bell peppers (from a jar)
Easy Crock Pot Spaghetti

Combine all ingredients in crock pot, except spaghetti
- 1 pound ground beef, browned
- 1 can (8 oz.) tomato sauce
- 1/2 cup onion, chopped
- 3 cups tomato juice
- 2 t. salt
- 1 ½ cups broken spaghetti
- 1/2 t. garlic powder
- 1/2 t. dry mustard
- 1/4 t. pepper
- **If you don’t have tomato juice, use a second can of tomato sauce plus enough water to make 3 cups.
Crockpot Beef Stew Recipe

Mix all ingredients, except peas, in a crockpot and cook on low for 8 to 10 hours
- 1 lb. beef stew meat
- 1 pkg. Knorr's Oxtail beef soup mix
- 1 bottle of beer
- 3 carrots, sliced
- 1 pkg. frozen peas
Chicken Francese

Place flour in a shallow bowl
- 1/2 cup flour
- 4 skinless, boneless chicken breasts, pounded to 1/4" thickness
- 3 eggs
- 1/3 cup Parmesan cheese
- 1 T. dried parsley
- 1/2 t. salt
- 1/4 t. pepper
- 2 T. olive oil
- 1 T. butter
- 3 T. lemon juice
Mango Bread

Preheat oven to 350 degrees
- 2 cups all-purpose flour
- 3/4 cup canola oil
- 2 t. baking soda
- 1 ½ cup sugar
- 1 t. baking powder
- 2 cups fresh mango, diced
- 2 t. ground cinnamon
- 3 eggs, well beaten
- 1/2 cup each: raisins, chopped macadamia nuts, walnuts, grated coconut

Preheat oven to 350°F. Prepare three 8″ round cake pans with parchment paper, butter and flour
- Zesty Lemon Frosting:
- 2 cups plus 6 tablespoons all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 3 cups fresh blueberries
- 1/2 cup sour cream
- 1/2 cup whole milk
- 2 teaspoons vanilla extract
- 3/4 teaspoon pure lemon extract
- 1 teaspoon lemon zest
- 1 cup (2 sticks) unsalted butter, softened about 20 minutes out of refrigerator
- 1 1/2 cups white sugar
- 4 large eggs
- 1 cup soft unsalted butter
- 2 teaspoons lemon zest
- 5 cups icing sugar (or 6 for sweeter version)
- 60 ml fresh lemon juice
- 6 tablespoons whipping cream (35% cream)
- 1/2 teaspoon pure lemon extract
- 2 tablespoons water
- pinch salt
- 1 drop of AmeriColor “Electric Yellow” gel color (optional)

- 2 cups dry pinto beans
- 1 can (15 oz.) tomato sauce
- 2 onions, finely chopped
- 1 ½ lbs. lean ground beef
- 2 T. chili powder
- 1 T. salt
- 1 t. prepared minced garlic
