- 1 cup strong black coffee
- 1/2 cup worcestershire sauce
- 1/4 cup butter
- 2 tbsp. sugar
- 1 tbsp. cracked black pepper
- 1/2 to 1 tbsp. salt
- 1-2 jalapenos, chopped
SUBSTITUTIONS

Ingredient substitutions ROPIN THE FLAVORS OF TEXAS
- 1 CUP FLOUR 1 cup plus 2 tbsp. cake flour OR 1 cup rolled oats OR 1 cup graham flour OR 1 1/2 cup bread crumbs or 7/8 cup cornmeal
- 1 CUP SELF RISING FLOUR-----
- 1 cup all-purpose flour plus 1 1/2 tsp. baking powder and 1/8 tsp. salt
- 1 CUP CAKE FLOUR
- 1 cup all purpose flour less 2 tbsp.
- 1 CUP BISCUIT MIX
- 1 cup flour plus 1 1/2 tsp. baking powder and 2 tbsp. shortening.
- 2 TBSP. FLOUR (for thickening)
- 1 tbsp. cornstarch OR 3/4 oz. bread crumbs OR 7 egg yolks OR 3 1/2 whole eggs
- 1 TSP.. BAKING POWDER
- 1/4 baking soda plus 1/2 cup buttermilk OR sour milk (reduce liquid in recipe by 1/2 cup) OR 2 egg whites
- 1 TBSP. CORNSTARCH
- 2 tbsp. all-purpose flour
- 1 PKG. (2 TSP.) ACTIVE DRY YEAST
- 1 cake compressed yeast
- 1 CUP WHOLE MILK
- 1/4 cup dry whole milk plus 1 cup water OR 3/4 cup non-fat dry milk plus 1 cup water and 3 tbsp. melted butter OR 1/2 cup evaporated milk plus 1/2 cup water OR 1 cup buttermilk plus 1/2 tsp. baking soda
- 1 CUP LT. CREAM
- 7/8 cup milk plus 3 tbsp. melted butter
- 1 CUP HEAVY CREAM
- 3/4 cup milk plus 1/3 cup melted butter
- 1 CUP BUTTERMILK OR SOUR MILK
- 1 cup milk plus 1 tbsp. lemon juice or vinegar; let stand 5 minutes OR 1 cup milk plus 1 3/4 tsp. cream of tartar
- 1 CUP HEAVY SOUR CREAM
- 1 cup plain yogurt OR 2/3 cup sour milk, buttermilk or plain yogurt plus 1/3 cup melted butter OR 1 cup evaporated whole milk and 1 tbsp. lemon juice
- 1 CUP THIN SOUR CREAM
- 3/4 cup sour milk, buttermilk or plain yogurt plus 3 tbsp. melted butter
- 1 CUP DARK CORN SYRUP
- 3/4 cup light corn syrup plus 1/4 cup light molasses
- 1 CUP LIGHT OR DARK CORN SYRUP
- 1 1/4 cups granulated or packed brown sugar plus 1/4 cup additional liquid from recipe
- 1 CUP POWDERED SUGAR
- 1/2 cup plus 1 tbsp granulated sugar
- 1 CUP LT. BROWN SUGAR
- 1/2 cup dark brown sugar plus 1/2 cup granulated sugar
- 1 CUP GRANULATED SUGAR
- 1 3/4 cups powdered sugar
- OR 1 cup firmly packed brown sugar OR 1 cup superfine Sugar
- 1 (1 oz.) SQUARE UNSWEETENED CHOCOLATE
- 2 tbsp. cocoa plus 1/2 tbsp. butter OR 1/2 cup semisweet chocolate morsels, decreasing sugar by 1/4 cup OR 1 (1 oz ) envelope soft baking chocolate
- 3 ( 1 OZ.) SQUARES SEMISWEET BAKING CHOCOLATE
- 1/2 cup semisweet chocolate morsels
- 1/4 CUP COCOA POWDER
- 1/2 cup (3 oz.) semisweet chocolate morsels decreasing shortening by 1 tbsp. and decreasing sugar by 1/4 cup OR (1 oz. ) envelope soft baking chocolate
Fancy Fruit Dessert

Mix fruit and cointreau. Refrigerate 2 or more hours
- 1 16 oz. can sliced peaches, drained
- 1 10 oz. package frozen raspberries, thawed
- 1 8 oz. carton sour cream
- 1/4 cup brown sugar
- 2 tbsp. triple sec, or to taste (sub)
Deviled Eggs

Remove yolk from egg whites using a tsp
- 12 hard-cooked eggs, cut in half
- 6 tbsp. mayonnaise
- 2 tbsp. yellow mustard
- 1/4 tsp. salt
- 1/8 tsp. ground red pepper or black pepper
- Paprika for garnish ( optional)
Hot Chicken Casserole

Combine all ingredients except stuffing mix
- 3 cups cooked chicken breasts, cut in big chunks
- 1 cup chopped celery
- 2 tbsp. chopped onion
- 1 cup mayonnaise
- 1 can cream of chicken soup
- 1-8 oz. can water chestnuts, sliced
- 1/2 cup slivered almonds
- 3 tbsp. lemon juice
- salt
- pepper
- 1-8oz. package herb seasoned stuffing mix
Sweet Potato Casserole

Peel, boil and mash sweet potatoes
- 8 sweet potatoes
- 6 tbsp. butter
- 2 eggs, beaten
- 4 tbsp. sherry (sub something)
- 1/2 tsp. nutmeg
- Salt and Pepper to taste
- 1/2 cup chopped pecans
- 2 tbsp. butter, melted
- 1/2 cup chopped pecans
- Marshmallows
Fagioli Al Fiasco

1. Cook beans according to the basic instructions 2
- 9 oz. dried cannellini
- 1/4 cup packed, minced fresh sage
- 1 tsp. minced garlic
- 3 tbsp. minced fresh parsley
- 1/2 cup extra-virgin olive oil
- 1 tbsp. balsamic vinegar
- 1 1/2 tsp. salt, kosher
- salt and pepper to taste
Salt Potatoes

Salt potatoes originated with Irish workers at the Syracuse Salt yards near Onondaga Lake about a century ago
- EQUIPMENT:
- 8 qt. pot
- 4 1/2 lbs. B size No. 2 white potatoes, 1 to 2 inches (the size of a large gumball is a good estimate)
- 12 oz. salt
- 2 qts. water
- melted butter, for dipping
4th of July Macaroni Salad

Mix all ingredients. Ready to eat, but I like to let it set for a few hours or overnight for better flavor
- 1 pkg. shell macaroni (cooked)
- 1 med. green pepper chopped
- 1 sm. can pimiento, chopped
- 1 med. onion, chopped
- 1 cup sweet pickles, chopped
- 1/2 c. celery, chopped
- 1/2 c. mayonnaise
- 1 tbsp. vinegar
- 1/4 c. sugar
- Salt and Pepper to taste
- Sub. dill pickles for sweet.
Rump Roast Stroganoff

Rub roast with salt, pepper and garlic powder
- 6-7 lb. rump roast
- 3 tbsp. butter
- 1 pkg. onion soup mix
- 2 cups sour cream
- 2 tsp dill weed
- 1 tsp. salt
- Coarse pepper to taste
- Garlic powder to taste
