Pineapple Dressing

Blend dry ingredients; add juices
- 1/3 cup sugar
- 4 tsp. cornstarch
- 1/4 tsp. salt
- 1 cup pineapple juice
- 1/4 cup orange juice
- 3 tbsp. lemon juice
- 2 beaten eggs
- 2 3 oz. packages cream cheese, softened
Oven Fried Apples

Put chunked apples in baking pan
- Approx. 4.5 lbs. of apples, peeled, cored and chunked
- 3/4 cup brown sugar
- 3/4 cup white sugar
- 2 tsp cinnamon
- 1 stick of butter
Chocolate Cheeecake Muffins

Preheat oven to 375. Grease 12 muffin cups
- 1 1/4 cups flour
- 1 cup sugar (divided)
- 1/3 cup unsweetened cocoa powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 2/3 cup buttermilk
- 1/4 cup vegetable oil
- 1/4 cup butter ( 1/2 stick), melted and cooled
- 2 eggs (divided)
- 1 1/8 tsp. vanilla extract (divided)
- 1/3 cup chocolate chips
- 2 pkgs. cream cheese (3oz. each), softened (maybe more)
- 1/4 cup slivered almonds
- 1/4 cup slivered almonds
Curry Mayonnaise

Combine all ingredients, mixing well
- 2 cups mayonnaise
- 2 tsp. curry powder
- 2 tsp. lemon juice
- 2 tsp. grated onion
- 2 tsp. sweet pickle juice
Fresh Frozen Peach Dessert

Crust: Mix all ingredients
- Graham Cracker Crust:
- 1 cup graham cracker crumbs
- 1/4 cup sugar
- 1/4 cup melted butter
- Filling:
- 2 eggs, separated
- 1 egg, whole
- 1 cup sugar
- 2 med. unpeeled fresh peaches, crushed
- 1 tbsp. lemon juice
- 1/4 tsp. cream of tartar
- 1/4 cup sugar
- 1 cup whipping cream
- 1 medium unpeeled fresh peach, sliced
Frozen Strawberry Pie

Mix all ingredients and pour into 4 foil lined pie plates
- Oven Temperature: 425 degrees
- 4 qts. strawberries, washed and sliced
- 4 cups sugar, less if berries are sweet
- 3/4 cup tapioca
- 1/4 cup lemon juice
- 1 tsp. salt
Herbed Vinaigrette

Combine all ingredients in a large jar; cover tightly, and shake vigorously
- 2 cups olive oil
- 3/4 cup balsamic vinegar
- 1 (3 1/2 oz. ) jar capers, drained
- 1 tbsp. chopped fresh oregano
- 1 tbsp. chopped fresh tarragon
- 1 tbsp. minced garlic
- 1/2 tsp. salt
- 1/2 tsp. sugar
- 1/4 dried crushed red pepper
- 1/4 tsp. black pepper
Barbecued Ribs (oven)

Simmer ribs covered in enough salted water to cover about 1 hour, or till nearly tender
- 4 lbs. pork ribs, cut in serving pieces
- Sauce
- 1 tbsp. butter
- 1 clove garlic, minced
- 1/2 cup catsup
- 1/3 cup chili sauce
- 2 tbsp. brown sugar
- 2 tbsp. chopped onion
- 1 tbsp. worcestershire sauce
- 1 tbsp. mustard
- 1 tsp. celery seed
- 1/4 tsp. salt
- dash bottled hot pepper sauce
- 3 thin lemon slices.
Strawberry Angel Pie

To make meringue crust, beat egg whites until they turn opaque and foamy
- FOR THE CRUST:
- Makes 8 servings
- 3 egg whites, at room temperature for 30 minutes
- 1/4 tsp. cream of tartar
- 1/4 tsp. salt
- 3/4 cup sugar
- 1 tsp. vanilla
- FOR THE FILLING:
- 1/2 cup semisweet chocolate chips
- 1 1/2 to 2 tbsp. water
- 1 lb. strawberries
- 1 cup whipping cream
- 4 tbsp. sugar
Chili's Grilled Chicken Pasta

Place chicken and Cajun seasoning in a bowl or resealable plastic bag; toss or shake to coat
- 2 boneless skinless chicken breast halves cut into strips
- 2 tsp. Cajun seasoning
- 2 tbsp. butter
- 1 cup heavy cream ( more if needed)
- 1/4 tsp. dried basil
- 1/4 tsp. lemon pepper seasoning
- 1/4 tsp. salt
- 1/8 tsp. freshly-ground black pepper
- 1/8 tsp. garlic powder
- 4 oz. linguine or fettuccine cooked, drained
- Grated Parmesan cheese
