Cut bacon slices in half. On each bacon half, place 1/2 chicken liver and 1/2 water chestnut

Shrimp Creole

In a large Dutch oven , heat oil over medium-high heat
- 2 tbsp. vegetable oil
- 2 onions, chopped
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 cup diced celery
- 3 cloves garlic, minced
- 2 (14 oz.) cans whole tomatoes, chopped
- 2 cups chicken broth
- 1 (6 oz.) can tomato paste
- 2 tsp. sugar
- 1 tsp. creole seasoning
- 1 bay leaf
- 1/2 tsp. crushed red pepper flakes
- 1/2 tsp. salt
- 1/2 tsp. ground black pepper
- 1 1/2 lbs. med fresh shrimp, peeled and deveined
- Hot cooked rice
- Garnish: chopped fresh parsley

Bram's Pea Soup

1. soak beans in water to cover in small bowl overnight
- 1/2 cup dried white beans
- 2 pkg frozen peas
- 4 qts water
- 1 ham bone
- 2 1/2 cups chopped onions
- 1 cup chopped celery
- 3 med. potatoes, pared, cut in half
- 2 carrots, pared
- 1/2 cup fresh parsley
- 1/2 lb. ham, cut into cubes
- 1 tsp. dried thyme leaves
- 1/2 tsp. chili powder
- BV to taste
- 1 c. tomato sauce lg.
- 1 lb. fully cooked smoked polish sausage, sliced

Crisp Salted Oatmeal White Chocolate Cookies

1. Preheat oven to 350 degrees
- 1 cup all-purpose flour
- 3/4 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. table salt
- 14 tbsp. ( 1 3/4 sticks) unsalted butter, slightly softened
- 1 cup sugar
- 1/4 cup packed light brown sugar
- 1 large egg
- 1 tsp. vanilla extract
- 2 1/2 cups old-fashioned rolled oats
- 6 oz. good quality white chocolate bar, chopped (not white chocolate chips; theyre almost always artificial. I am adamant about this.)
- 1/2 tsp. flaky sea salt (like maldon or fleur de sel) (for sprinkling on top)
