EASY SUBSTITUTES

Don't despair when you run out of a key recipe ingredient and the pantry holds only its distant cousin
- Apple Cider:
- Aioli
- 1/2 cup: Stir together 1/2 cup mayo and 1 lg. garlic clove, minced
- 2 tbsp.: Combine 2 tbsp. apple juice and 1/4 tsp. cider vinegar
- Balsamic Vinegar
- 1 tbsp.: Combine 1 tbsp. cider or red wine vinegar and 1/2 tsp. sugar.
- Cake Flour
- 1 cup: Remove 2 tbsp. from 1 cup flour.
- Capers
- 1 Tbsp: 1 tbsp. chopped green olives
- Chili oil
- 1 tbsp. : Whisk a few drops of hot pepper sauce and / or red pepper flakes into 1 tbsp. olive oil or vegetable oil.
- Chives
- Substitute an equal amout snipped green onion tops.
- Cilantro
- Fresh: Substitute an equal amount of fresh parsley.
- Dried: Substitute equal parts dried parsley and dried coriander
- Creme Fraiche
- 1 cup: Combine 1/2 cup whipping cream and 1/2 cup sour cream. Let stand at room temperature for 30 minutes. Chill for longer storage. ( Note: Do not use ultra-pasteurized whipping cream)
- Garlic
- 1 clove: 1/2 tsp. bottled minced garlic or 1/8 tsp. garlic powder.
- gingerroot
- 1 tsp. grated fresh: 1/4 tsp. ground ginger
- Herbes De Provence
- Mix together at least five of the following dried spices in a mortar and pestle: basil, fennel seed, lavender, marjoram, rosemary, sage, savory, or thyme.
- Molasses
- 1 cup: Substitute 1 cup honey
- Saffron
- Substitute an equal amount of tumeric
- Sesame Seeds
- 1 tbsp.: Substitute 1 tbsp. finely chopped blanched almonds.
- Star Anise
- Substitute an equal amount of Chinese five spice or ground anise seed.
- Tamari
- 2 tsp.: Substitute 1 tbsp. soy sauce.
- Tomato Paste
- 1/2 cup: Cook 1 cup tomato sauce uncovered until reduced to 1/2 cup
- Vanilla Extract
- Substitute an equal amount of almond extract plus a pinch of cream of tartar.
Chicken Casserole

Spread washed rice on bottom of greased 13x9 inch casserole dish
- 8 Chicken Breasts
- 1 1/2 cups rice (uncooked and washed)
- 1 can cream of chicken soup
- 1 stick butter
- 1 can cream of mushroom soup
- 1 can cream of celery soup
- 1/2 soup can of water
Italian Sausage and Rice Casserole

Cook rice as directed on package
- Sauce:
- 1 6-oz. package long grain rice
- 1 lb. Italian sausage, casing removed
- 1/2 cup sliced onin
- 2/3 cup chopped sweet peppers (bell or banana)
- 1/2 tsp. tarragon leaves
- 1/4 tsp. marjoram leaves
- 1/4 tsp. salt
- 1/8 tsp. white pepper
- 2 tbsp. butter or fat drained from sausage
- 3 tbsp. flour
- 1 cup hot water
- 1 cube chicken bouillon
- 2/3 cup milk or light cream
- 1/4 cup slivered almonds
SWEET & SOUR PORK MEDALLIONS

TO MAKE THE SAUCE, COMBINE THE SUGAR, SOY SAUCE, KETCHUP, VINEGAR, HONEY, AND RED PEPPER FLAKES IN A SAUCEPAN
- SAUCE
- 1/2 CUP SUGAR
- 1/4 CUP SOY SAUCE
- 1/4 CUP KETCHUP
- 3 TAB. WHITE WINE VINEGAR
- 1 TAB. HONEY
- 1 TEA. RED PEPPER FLAKES
- JUICE FROM CANNED PINEAPPLE (SEE PORK BELOW)
- 2 TAB. CORNSTARCH
- 2 TAB. MINCED FRESH PARSLEY
- PORK
- 1 2 LB. PORK TENDERLOIN, SILVER SKIN REMOVED, SLICED INTO 1/2 IN. PIECES
- 2 TEA. KOSHER SALT
- 1/2 TEA. FRESHLY GROUND BLK PEPPER
- 1/4 CUP CANOLA OIL, PLUS MORE IF NEEDED
- 2 LARGE RED BELL PEPPERS, SEEDED AND CUT INTO 1/8 IN. STRIPS
- 1/2 LB. SNOW PEAS
- 2 GARLIC CLOVES, MINCED
- 1 14.5 OZ. CAN PINEAPPLE CHUNKS, JUICE RESERVED FOR THE SAUCE
- 2 TO 3 TAB. CHICKEN BROTH, HEATED, OPTIONAL
- 4 CUPS COOKED WHITE RICE
- 2 SCALLIONS, SLICED
Southern Baked Beans

Preheat oven to 325 degrees
- 1/2 lb bacon
- 1 large onion, diced
- one 16 oz. can pork and beans
- 3 tbsp. yellow mustard
- 5 tbsp. maple or pancake syrup
- 4 tbsp. ketchup
Gaucho Sauce

Simmer 20 minutes; stir occasionally
- 1 cup catsup
- 1 tbsp. Worcestershire sauce
- 2-3 dashes bottled hot pepper sauce
- 1/2 cup water
- 1/4 cup vinegar

Cocoa Nut Break-Up

1. Melt butter in medium saucepan
- 3/4 cup ( 1 1/2 sticks) butter
- 1 cup sugar
- 1/4 cup Hershey's Cocoa
- 2 tbsp. corn syrup
- 2 tbsp. water
- 3/4 cup coarsely chopped pecans or toasted slivered almonds
