Greek Salad (Elana Lewis)

Combine solid ingredients
- 1 head iceberg lettuce, torn
- 1 head of chickory lettuce, torn
- 2 scallions, chopped
- 1 (6oz) can black olives, drained and pitted
- 1 (2oz) can anchovies, drained (optional)
- 2 cucumbers, thinly sliced
- 2 large tomatoes, chopped
- 8 oz crumbled feta cheese
- 1/2 c olive oil
- 3 T red wine vinegar
- 1 T dried oregano
- Salt, pepper
Brisket (Roni)

- 4 T turkey fat
- 4 T flour

Italian Fruit Salad

Mix cottage cheese and dressing, set aside Toss salad blend with oranges Sprinkle with almonds

- 1 pkg DOLE special blends salad, any variety
- 1 can mandarin oranges, drained
- 1 can pineapple chunks, drained
- 1/2 c sliced almonds OR chopped green onions

- 1 c chopped jicama OR 1/2 c onion slices
- 2 T toasted sesame seeds
- Fresh raspberries (optional)
