Crunchy Coleslaw

Brown almonds and sesame seeds
- 1 big head coleslaw
- 1/4 c sugar
- 1/2 tsp white pepper
- 1 tsp salt
- 1 c oil
- 6 T rice vinegar
- 1/2 c almonds
- 1/4 c sesame seeds
- 8 green onions
Lasagna (Sora Deetza Spiegelman)

Combine the first 3 ingredients in a bowl
- 6 small cottage cheese (can substitute ricotta cheese for part)
- 2 eggs (or 4 whites)
- 1 pkg shredded cheese, reserve 1/4 c/1 large handful
- 9 + RAW lasagna noodles
- 1 jar of favorite marinara sauce
- 1 c water or milk
Red Cabbage

- Shmeer garlic on container
- Salt
- Pepper
- Olive oil
- Lemon juice
Spaghetti with Chicken and Vegetables

1. Cook spaghetti according to pkg directions
- 8 oz uncooked spaghetti
- 1 T olive oil
- 1 medium zucchini, coarsely chopped
- 1 yellow squash, coarsely chopped
- 1 pkg cooked chicken
- 1 jar tomato and basil pasta sauce
Potato, Spinach and Onion Gratin

Cook potatoes in large saucepan of boiling salted water until just tender, about 30 min
- 1 3/4 lb medium size potatoes, unpeeled
- 2 large onions, halved
- 1/4 c water
- 2 T olive oil
- 8 oz mushrooms, thinly sliced
- 1 10 oz pkg frozen chopped spinach, thawed, drained
- 4 garlic cloves, minced
- 4 tsp chopped fresh thyme
- 1/4 tsp ground nutmeg
- 1 c nonfat sour cream
- 1/2 c low fat milk
- 2 oz thinly sliced cheese
Pizza Macaroni and Cheese

1. Cook pasta as directed on package
- 1/2 box Elbow pasta, uncooked
- 1 lb Velveeta prepared Cheese Product
- 1/2 c milk
- Dash pepper
- 1/3 c pepperoni, chopped
- 1 T ketchup
- 1/2 tsp dried oregano leaves, crushed
- 1/4 tsp garlic powder
Tomato Mushroom Salad

Toss prior to serving
- Dressing:
- 1 box cherry tomatoes, cut in halves
- 4 scallions, chopped
- 1 box fresh mushrooms, sliced
- 2 T vinegar
- 2 T oil
- 1 tsp sugar
- 3 cloves garlic, crushed
- 1 tsp salt
- Black pepper
Isle of Capri Salad

Cook and drain pasta according to pasta directions
- 8 oz Farfalle pasta
- 1 can solid white tuna in spring water
- 6 plum tomatoes, seeded and chopped into large pieces
- 2 garlic cloves, minced
- 1/2 c fresh basil leaves, coarsely chopped
- 1/2 lb fresh mozzarella cheese, diced
- 3/4 c bottled Italian style vinaigrette salad dressing
Salad

- Dressing:
- 1 head romaine lettuce- two bodek
- 1 red onion, cut into rings
- 1/2 bag almonds
- 2 cans small manchin
- 1-2 handful craisins
- 1/2 c olive oil
- 2 T wine vinegar
- 1 T lemon juice
- 1/2 T minced onion
- 2 T sugar
- 1/2 T salt
- 1/4 T dry mustard
Pasta Primavera Salad

Combine vegetables and ¼ c water in shallow microwave safe casserole dish
- 8 oz Rotini Pasta
- 4 c assorted mixed vegetable (mix of carrots, broccoli, sweet peppers, onions, celery, asparagus)
- 2 c garlic cloves, peeled
- 1/3 c balsamic vinaigrette (or favorite Italian dressing)
- 1 tsp dried mix Italian herbs
- 1/3 c Shredded Parmesan cheese
- Salt and pepper
