Decent recipe. You can't go wrong when you're cooking with tomato, garlic and basil
- 1 Eggplant, cubed
- 1 onion, sliced
- 2 Garlic cloves, crushed
- 1 T Extra Virgin Olive oil
- 3 c Spinach
- 1 lb Chicken breasts, boneless
- 1 15oz can Diced tomatoes
- 1 T Italian seasoning
- 1 T Basil, fresh,
- 1/2 t Crushed Red pepper
- S&P to taste

- 3 tablespoons Ghee, recipe follows
- 2 medium onions, chopped
- 1 -inch piece ginger, peeled and finely chopped
- 4 garlic cloves, finely chopped
- 2 tablespoons tomato paste
- 2 tablespoons Curry Powder
- 1 cinnamon stick
- 1 to 3 dried red chiles
- Kosher salt and freshly ground black pepper
- 2 (15-ounce) cans unsweetened coconut milk
- 2 cups chicken stock
- 4 tomatoes, seeded and chopped
- 6 boneless, skinless chicken breasts, cut into 1-inch strips
- 1/4 cup cilantro leaves, plus more for garnish
- 1 lemon, juiced
- Mint leaves, for garnish

Orange Rosemary Pork Tenderloin

- Pork:
- 6 T Olive oil
- 2 t Orange zest grated
- 2 t Rosemary leaves minced
- 1 1/2-2 lb Pork Tenderloin
- S&P to taste
- Sauce:
- 1 Shallot minced
- 1/2 c Red Wine
- 1/2 c Chicken stock
- 3 T Butter cold & sliced
- 1 T Balsamic vinegar
- 1 t Rosemary leaves minced
- 1 t Orange zest grated
- S&P to taste
Mushroom Cream Sauce

My favorite mushroom sauce
- 2 T Butter unsalted
- 2 Garlic cloves minced
- 5 Sage leaves chopped
- 6 oz Portobello Mushrooms sliced
- 1 cup Heavy Cream
- 1/2 Leek roughly chopped
- S&P to taste
Grilled Pork Tenderloin with Guava Glaze and Orange-Habanero Mojo- by Bobby Flay

Sweet heat Tenderloins. I used sugar-free preserves for this to lower the carbs
- Guava glaze:
- 1 Pork Tenderloin
- Canola oil (I used EVO)
- S&P to taste.
- 1 cup guava
- 2 T Dijon mustard
- 2 T Orange juice
- S&P to taste.
- Orange Habanero Mojo:
- 1/4 cup Lime juice fresh
- 3 cups Orange juice fresh
- 1/2 small Red Onion finely chopped
- 4 Garlic cloves finely chopped
- 1 Habanero pepper finely chopped
- 1 t Cumin Seed
- S&P to taste

- Cabbage Slaw:
- 1 Onion chopped
- 1 10 lb bone in Pork shoulder ( I used a smaller pork roast about 3-4 lbs.)
- 2 T Soy sauce
- 1 T Garlic chopped
- 1 c Orange Marmalade ( I used sugar free)
- 20 tortillas ( I used 6-10 tortillas)
- 1 Red Cabbage head shredded
- 4 Carrots grated
- 1/4 c Cider Vinegar
- S&P to taste

African Peri Peri Chicken

I like to use smoked paprika and Chipotle powder for a nice smoky heat
- 1/8 cup paprika
- 1 tablespoons hot chili powder
- 1/2 cup fresh lemon juice
- 2 cloves garlic, minced
- 1 teaspoons chopped fresh ginger
- 1 teaspoons salt
- 2 chicken breast halves
