Ingredients

  • 1

    Eggplant, cubed

  • 1

    onion, sliced

  • 2

    Garlic cloves, crushed

  • 1

    T Extra Virgin Olive oil

  • 3

    c Spinach

  • 1

    lb Chicken breasts, boneless

  • 1

    15oz can Diced tomatoes

  • 1

    T Italian seasoning

  • 1

    T Basil, fresh,

  • 1/2

    t Crushed Red pepper

  • S&P to taste

Directions

Heat a large saute pan on medium high & heat oil & garlic. Add sliced onion & eggplant & let cook for 5 mins, stirring often until onions are translucent & eggplant is somewhat soft. Cut uncooked chicken into cubes & add to pan. Let cook 5-7 mins or until fully cooked. Add spinach. Cook until wilted. Add diced tomatoes & season. Mix & simmer for 7-10 mins. Taste & adjust seasoning as desired. Serve & enjoy.
