- 1 can unsweetened coconut milk
- 3 tablespoons grated fresh ginger
- 1 heaping tablespoon mild curry powder
- 1 tablespoon fresh lime juice
- 1 teaspoon ground star anise
- 1 teaspoon Spanish paprika
- 1/4 teaspoon coarsely ground black pepper
- 2 Scotch bonnet chiles, chopped, or 2 tablespoons Scotch bonnet hot sauce
- 6 cloves garlic, finely chopped

- 2 t Thyme leaves fresh and chopped
- 6 c Chicken broth
- 2 ea 12oz jars Roasted Red Bell Peppers (water drained)
- 1 Russet Potato peeled and coarsely chopped
- 1/2 c Dry White Wine
- 1 T Sugar ( I used Stevia)
- 1/2 c Mascarpone Cheese
- S&P to taste

- 2 T Brown Sugar
- 2 t Paprika ( used hot Hungarian because that's how I roll)
- 2 t Coriander ground
- 1/2 t Crushed Red Pepper
- 1 T Ginger minced
- 2 t Garlic cloves minced
