Oktoberfest Savory Pot Roast

Place roast in oven-proof dish
- 3 lbs brisket or blade pot roast
- 2 Tbs Dijon mustard
- 2 Tbs brown sugar
- 2 cloves garlic, crushed
- 1/4 tsp nutmeg
- 3 large onions, sliced
- 1 cup each: beer or ale and beef stock
- 6 carrots, peeled and quartered
- 3 parsnips, peeled and quartered
- 6 to 8 medium new potatoes
Caramel-Apple Pudding Cake

Preheat oven to 350 degrees F
- 2 medium tart cooking apples, such as Granny Smith or Jonathan, peeled, cored, and thinly sliced (2 cups)
- 3 Tbs lemon juice
- 1/2 tsp ground cinnamon
- 1/8 tsp ground nutmeg
- 1/4 cup raisins
- 1 cup all-purpose flour
- 3/4 cup packed brown sugar
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/2 cup milk
- 2 Tbs butter (no substitutes), melted
- 1 tsp vanilla
- 1/2 cup chopped pecans or walnuts
- 3/4 cup caramel ice cream topping
- 1/2 cup water
- 1 Tbs butter (no substitutes)
Old-Fashioned Oatmeal Pie

Combine all ingredients except pie shell and whipped cream; mix well
- 3/4 cup honey
- 2 eggs, beaten
- 3/4 cup quick cooking rolled oats
- 3/4 cup coconut
- 3/4 cup dried cranberries, currants or raisins
- 3/4 cup chopped walnuts
- 9 -inch unbaked pie shell
- whipped cream, if desired

Preheat convection oven to 325 degrees F or standard oven to 350 degrees F
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 1 1/2 tsp apple pie spice
- 1/4 tsp salt
- 2 cups coarsely shredded carrot
- 1 cup coarsely shredded apple
- 3/4 cup cooking oil
- 4 large eggs
- 1/2 cup chopped nuts
- 1 cup whipping cream
- 1 8-ounce carton dairy sour cream
- 2 Tbs brown sugar
- 1 tsp vanilla
- 1/4 cup coarsely crushed purchased apple chips
- 4- 5 whole purchased apple chips (optional)
- 5-6 inch-long cinnamon sticks (optional)
Old-Fashioned Peanut Butter Chocolate Chip Cookies

Preheat oven to 375° F. Combine flour and baking soda in small bowl
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1 cup (2 sticks) butter or margarine, softened
- 1/2 cup creamy or chunky peanut butter
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 tsp vanilla extract
- 1 large egg
- 1 3/4 cups (11.5-oz. pkg.) NESTLÉ® TOLL HOUSE® Milk Chocolate Morsels
- Granulated sugar
Bayou Shrimp Fettuccine

Split shrimp lengthwise and place in a chafing dish with melted butter and pepper, and saute' for 3 minutes
- 1/2 lb to 1 lb small shrimp, cooked in seasoned water, drained
- 1/2 cup butter, melted
- 1/2 tsp milled black pepper
- 1 lb noodles, cooked in salted water, drained
- 1/2 cup heavy cream, warmed
- salt, to taste
Chicken Salad Contessa

Preheat the oven to 350 degrees F
- 2 split (1 whole) chicken breasts, bone in, skin on (1 1/2 pounds)
- olive oil
- Kosher salt and freshly ground black pepper
- 1/2 cup pecan halves
- 1/2 cup walnuts halves
- 1/2 cup good mayonnaise
- 1/2 cup sour cream
- 1 Tbs chopped fresh tarragon leaves, divided
- 1 cup green grapes, cut in 1/2
- Lettuce leaves, for serving
BBQ Beef Sandwiches

- 2.5 to 3 lbs lean boneless chuck roast
- 1/4 cup tomato ketchup
- 1 Tbs Dijon-style mustard
- 2 Tbs brown sugar
- 1 garlic clove, crushed
- 1 Tbs Worcestershire sauce
- 2 Tbs red wine vinegar
- 1/4 tsp liquid smoke flavoring
- 1/4 tsp salt
- 1/8 tsp pepper
- 10 to 12 French rolls or sandwich buns
Chicken with Port and Figs

- 8 dried figs, tough stems removed
- 1 cup water
- 2/3 cup plus 1 tablespoon port
- 2 3-inch-long strips lemon zest
- 1 chicken (3 to 3 1/2 pounds), quartered
- 1 Tbs olive oil
- Salt
- Fresh-ground black pepper
- 1 Tbs butter, cut into four pieces
